gluten-free white bread for bread machines

Ingredients

  • Servings: 1
  • 3 eggs
  • 1 tablespoon vinegar
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1 1/2 cups buttermilk, at room temperature
  • 1 teaspoon salt
  • 1 tablespoon xanthan gum
  • 1/3 cup cornstarch
  • 1/2 cup potato starch
  • 1/2 cup soy flour
  • 2 cups white rice flour
  • 1 tablespoon active dry yeast

Recipe

  • place ingredients in the pan of the bread machine in the order recommended by the manufacturer.
  • select the sweet dough cycle. five minutes into the cycle, check the consistency of the dough. add additional rice flour or liquid if necessary.
  • when bread is finished, let cool for 10 to 15 minutes before removing from pan.

  • 2 kiwis, peeled and diced
  • 2 apples - peeled, cored and diced
  • 8 ounces raspberries
  • 1 pound strawberries
  • 2 tablespoons white sugar
  • 1 tablespoon brown sugar
  • 3 tablespoons fruit preserves, any flavor
  • 10 (10 inch) flour tortillas
  • butter flavored cooking spray
  • 2 tablespoons cinnamon sugar

  • in a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. cover and chill in the refrigerator at least 15 minutes.
  • preheat oven to 350 degrees f (175 degrees c).
  • coat one side of each flour tortilla with butter flavored cooking spray. cut into wedges and arrange in a single layer on a large baking sheet. sprinkle wedges with desired amount of cinnamon sugar. spray again with cooking spray.
  • bake in the preheated oven 8 to 10 minutes. repeat with any remaining tortilla wedges. allow to cool approximately 15 minutes. serve with chilled fruit mixture.

  • 4 skinless, boneless chicken breasts

Recipe

  • in a large, nonporous bowl, combine the garlic and the soy sauce. add the chicken and turn to coat well. cover and marinate in the refrigerator for at least an hour.
  • preheat an outdoor grill for medium high heat and lightly oil the grate.
  • grill chicken over medium high heat for 10 to 15 minutes per side, or until internal temperature reaches 180 degrees f (80 degrees c). discard any remaining marinade.

  • 1 teaspoon ground cinnamon
  • 3/4 cup nonfat milk
  • 2 egg whites
  • 1/4 cup vegetable oil
  • 1/4 cup honey
  • 1 cup grated zucchini

  • preheat oven to 375 degrees f (190 degrees c). grease muffin tins lightly with oil or spray with a non-stick cooking spray.
  • combine whole wheat flour, baking powder, salt and ground cinnamon, mix thoroughly.
  • mix the milk, slightly beaten egg whites, oil, honey and shredded zucchini together. pour into the dry ingredients and stir until just barely moistened. batter should be lumpy. fill muffin tins 2/3 full with batter.
  • bake at 375 degrees f (190 degrees c) for 20 minutes or until lightly browned.

  • 3 egg whites
  • 1 teaspoon almond extract
