Cocoa-berry Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 2 egg whites
  • 1/2 cup applesauce, unsweetened
  • 1/2 cup nonfat plain yogurt
  • 1 3/4 cups flour
  • 1/2 cup cocoa, hershey low-fat works great
  • 3/4 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup strawberry

Recipe

  • 1 mix egg whites, applesauce, and yogurt in one bowl.
  • 2 mix dry stuff in another bowl.
  • 3 mix the two together, mixing only enough to combine well.
  • 4 put into well-greased muffin tins.
  • 5 bake at 350 degrees for 25 minutes or until tester comes out clean.
  • 6 remove from pan to cool.
  • 7 fresh or frozen berries of any kind can be used.

Cherry Jam

Total Time: 1 hr 25 mins Preparation Time: 1 hr Cook Time: 25 mins

Ingredients

  • 3 lbs bing cherries, pitted (about 4 cups chopped)
  • 1/4 cup lemon juice
  • 1/4 cup kirsch liqueur (optional)
  • 1 (1 3/4 ounce) package powdered fruit pectin
  • 5 cups granulated sugar
  • 1 teaspoon butter
  • 1 teaspoon almond extract

Recipe

  • 1 prepare jars and lids according to the usda guidelines for preserving foods.
  • 2 in a large stainless steel or enameled pot combine the chopped cherries, lemon juice, butter and liqueur if using.
  • 3 heat over high heat and add powdered pectin and stir until blended.
  • 4 bring to a full boil, stirring constantly.
  • 5 add sugar all at once and return to a rolling boil, stirring constantly.
  • 6 boil for 1 minute and remove from heat.
  • 7 add the almond extract mixing well.
  • 8 skim off any foam and let sit for 5 minutes, stirring every minute.
  • 9 ladle into hot jars, leaving about 1/4" headspace.
  • 10 wipe rims with a damp cloth.
  • 11 fit lids on jars and screw the bands on to finger tight being careful not to over-tighten.
  • 12 place jars on rack in water bath canner making sure there is 1-2 inches of water over the tops of the jars.
  • 13 cover and bring to a boil.
  • 14 boil for 10 minutes then turn off fire and remove lid.
  • 15 let sit for 5 minutes in water then remove and place upright on a thick kitchen towel to cool.
  • 16 check to make sure lids have sealed and store in cool dry area for up to one year.

Cauliflower Salad

Ingredients

  • 1 head cauliflower
  • salt and pepper
  • wine vinaigrette
  • parmesan cheese, grated

Recipe

  • 1 using a vegetable steam, cook the cauliflower whole, until fork tender, about 15 minutes.

  • 1 make dressing by mixing mayo, sugar and cheese together. if not using until the next day, keep in fridge but remove 2 hours before serving salad.
  • 2 break lettuce and cauliflower into small pieces in large bowl, add chopped onion.
  • 3 pour dressing a little at a time and mix together adding more dressing as needed.

  • 12 black olives

  • 1 cut "sheep" bodies from cauliflower head. one head will make 10-14 sheep.
  • 2 add cloves (eyes) to the olives (head). if your olives are large enough you can use black eyed peas for the eyes. cut little flaps to the sides of the eyes for ears.
  • 3 using toothpicks to attach veggies in the appropriate places, attach 4 carrots (legs) and one olive (head) to each "body.".
  • 4 place parsley (grass) in finger bowls and add.

De-lightful Pasta Salad

Ingredients

  • Servings: 10
  • 3/4 cup vegetable oil
  • 3/4 cup vinegar
  • 1 cup sugar
  • 1/2 cup mayonnaise (miracle whip) or 1/2 cup salad dressing (miracle whip)
  • 1 large cucumber, peeled and diced
  • 1 small red onion, diced
  • 1 small cauliflower, broken into small florettes
  • 1 bunch broccoli, broken into small florettes
  • 1/2 cup sliced black olives
  • 1 (16 ounce) bag tri-color spiral pasta

Recipe

  • 1 cook pasta till done.
  • 2 rinse well under cold water.
  • 3 drain completely.
  • 4 in a large bowl add well drained pasta and all vegetables.
  • 5 mix all dressing ingredients in a medium bowl.
  • 6 pour dressing over pasta and vegetables and mix gently until combined.
  • 7 salt and pepper to taste.
  • 8 chill till serving.
  • 9 *this recipe is easily doubled.

Chocolate Sorbet

Ingredients

  • 1 1/4 cups sugar
  • 3 cups water
  • 3/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla

Recipe

  • 1 cook sugar in dry saucepan without stirring until it begins to melt.
  • 2 over very low heat, stir occasionally with a fork and continue cooking until all sugar is melted and it's just starting to turn a very light caramel brown (not dark brown).
  • 3 add water - it will bubble and sizzle a lot! use caution and cook and whisk constantly over very low heat until caramel is dissolved in the water.
  • 4 whisk in cocoa and salt until dissolved.
  • 5 transfer to a bowl to cool, stir it occasionally.
  • 6 stir in vanilla then chill about 2 hours.
  • 7 freeze in your ice cream maker then transfer to your freezer to harden.

Cauliflower Salad

  • 1 wash the cauliflower and place in a two quart saucepan.

  • 14 tablespoons sugar
  • 2/3 cup walnuts, toasted
  • 1/2 cup unsweetened cocoa powder
  • 3 tablespoons vegetable oil
  • 8 large egg whites
  • 1 pinch salt
  • powdered sugar

Recipe

  • 1 preheat oven to 350°f line bottom of 8-inch springform pan with 2-3/4-inch high sides with parchment paper.
  • 2 spread pan and paper with vegetable oil spray.
  • 3 sprinkle pan with 2 tablespoons sugar.
  • 4 finely grind nuts with 2 tablespoons sugar in processor.
  • 5 transfer nut mixture to large bowl.
  • 6 mix in 10 tablespoons sugar and cocoa, then oil.
  • 7 using electric mixer, beat egg whites and salt in large bowl until soft peaks form.
  • 8 fold whites into cocoa mixture in 3 additions.

  • 4 boneless chicken breasts, cut in half lengthwise

  • 1/4 cup soy sauce
  • 1/2 cup chicken consomme
  • 1 teaspoon fresh ginger, grated

  • 1 egg, beaten
  • 1 teaspoon salt
  • 1 cup ice water

Recipe

  • 1 combine chicken and marinade ingredients in a shallow dish & place in the refrigerator; let marinade for 24 hours.
  • 2 preparation of batter:.
  • 3 place dry ingredients in a small bowl & mix well. place the ice water and egg in another bowl and slowly add the dry ingredients to the water. mix lightly but do not over beat. there should be a few small lumps in the batter. dredge the marinated chicken in some flour, then dip into the tempura.
  • 4 deep fry the "dredged" chicken in enough oil to completely sink the breast underneath the surface. the oil must be 350 degrees which is the preferred frying temp of most professional cooks. (make sure it's not over-used and too dark, or smoking.).
  • 5 note: 400 degrees would fry the surface of the breast too dry, and leave the inside underdone.
  • 6 fry at this temp for either 15-20 minutes, or until the piece has floated at the surface for a minute. dark meat takes a few minutes longer -- especially legs.

  • 1 heat deep fryer on maximum.
  • 2 drain beans, wash them in a strainer and dry them properly with paper towels.

Chinese Buffet Black Pepper Chicken

Ingredients

  • 1 lb boneless skinless chicken breast (or thighs)
  • 6 tablespoons cornstarch (for dusting)
  • 1 onion, diced
  • 1 cup frozen peas and carrot
  • oil (for frying)
  • 1/4 cup oyster sauce

  • 1 teaspoon black pepper

  • 4 heat 1 tbsp oil in pan and stir fry onion for a few minutes, then add the peas and carrots and stir fry for another few minutes.
  • 5 add sauce mixture to the veggies and heat until warm, then add the chicken and fully coat with the sauce.

Crab Dip With Tortilla Chips

Ingredients

  • 1 tablespoon olive oil
  • 3/4 cup chopped green bell pepper
  • 3/4 cup chopped red bell pepper
  • 3/4 cup green onion
  • 3 -4 tablespoons lemon juice

  • 1 lb crabmeat
  • salt
  • tortilla chips (for dipping)

Recipe

  • 1 heat olive oil on low heat, add the chopped green bell peppers, red bell peppers, green onions. saute on low heat, stirring occasionally.
  • 2 while vegetables are sauting finely chop the crab meat. place crab meat in a plastic container with a lid.
  • 3 once the vegetables are translucent, remove from heat and let cool.
  • 4 then add the cooled vegetables to the crab meat.

  • 1 1/4 cups fresh lime juice (about 9 limes)
  • 3 lbs dark cherries
  • 2 1/4 cups black cherry vodka or 2 1/4 cups plain vodka
  • 1 (750 ml) bottle sparkling water

  • 1 bring sugar and 1 1/4 cups water to a boil in a small saucepan, stirring until sugar has dissolved.
  • 2 remove from heat; let cool completely. (makes about 2 cups syrup.) syrup can be refrigerated in an airtight container up to 1 month.
  • 3 put lime juice into a medium nonreactive bowl. halve 2/3 of the cherries; add all cherries to lime juice. stir in syrup. refrigerate at least 1 hour (up to overnight).

Ingredients

  • 1 1/2 cups frozen corn, thawed
  • 1 cup frozen peas, thawed
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 medium tomato, chopped
  • 1/3 cup chopped red onion
  • 1/4 cup lime juice
  • 1 tablespoon dijon mustard

  • 1 place first 6 ingredients into a 5-6 qt slow cooker and stir. turn the slow cooker on low and cook for 6-8 hours.

Recipe

  • 1 in a medium saucepan, combine 2 1/4 cups of water and the sugar, and bring to a boil over high heat, stirring occasionally.
  • 2 gradually add cocoa powder, whisking until smooth.
  • 3 reduce heat to low, and cook mixture at a gentle simmer for 30 minutes, until syrupy.
  • 4 put chocolate in a large bowl, add half the cocoa syrup, whisking until chocolate is melted and mixture is smooth.
  • 5 add remaining syrup and whisk well.
  • 6 strain mixture through a fine sieve, and let cool.

  • 1 tablespoon butter

  • 1 teaspoon grated fresh ginger

Recipe

  • 1 place onions in a bowl and cover with boiling water.
  • 2 let stand for 2 to 3 minutes.
  • 3 meanwhile, place carrots in a nonstick frying pan.
  • 4 brely cover with water and bring to a boil over high heat.
  • 5 reduce heat, cover and simmer gently until carrots are just tender when pierced (7 to 10 minutes).
  • 6 drain carrots and set aside.
  • 7 while carrots are cooking, drain onions, then peel skins off and discard them.
  • 8 also trim root and stem ends of onions.

Recipe

  • 1 boil a quart of water with 1 t salt. add pasta and boil until tender. drain (do not rinse).
  • 2 while water is warming up for pasta, brown 1 pound of ground beef until 1/2 pink. while beef is browning, cut up peppers, onion and garlic.
  • 3 add onions and garlic. cook, stirring, for 2 minutes.
  • 4 add peppers and cook until beef is browned and peppers are tender.
  • 5 with your hands, break the can of whole tomatoes into thirds and add to mixture.
  • 6 add remaining juice in can along with the tomato sauce, oregano, basil and corn.
  • 7 boil for 5 minutes to reduce to a "sloppy joe" consistency. add salt and pepper to taste.

Broiled Chicken With Fig Sauce

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 4 chicken legs-thighs, cut in two or 8 chicken thighs
  • salt and pepper
  • 1/4 cup honey
  • 1 cup dry wine
  • 1 pinch cayenne
  • 1 cup dried fig, stemmed and chopped
  • 1 teaspoon coriander seed
  • 1/2 orange, juice and zest of
  • 1/2 lemon, juice of, to taste

Recipe

  • 1 place broiler rack 4 to 6 inches from heat source, and turn broiler on.
  • 2 sprinkle chicken on both sides with salt and pepper, and place skin-side down in a pan.
  • 3 place honey in a 4- to 6-cup saucepan with one tablespoon water, and put on high heat.
  • 4 let honey boil for a minute or so, then carefully add wine, cayenne, figs, coriander, orange zest and orange juice.
  • 5 mixture should cook steadily; do not let it boil over.
  • 6 broil chicken until it begins to brown on skinless side.
  • 7 turn it over, then broil until it browns nicely and is cooked all the way through.
  • 8 total broiling time will be about 25 minutes.
  • 9 cook sauce until figs are very tender, about 15 minutes.
  • 10 add lemon juice, then taste, and add more salt, cayenne or lemon as needed.
  • 11 serve chicken with sauce spooned over it.

  • 1 soak 100% bran in boiling water. let cool. cream together applesauce, sugar and eggs. combine with soaked bran. mix together milk and vinegar. add milk mixture alternately with flour, soda and salt. mix well. stir in all-bran. add fruit if desired. fill muffin tins 3/4 full. bake at 375* for 18-20 minute check often to decide time for your oven.

Recipe

  • 1 mix flour, baking powder, 1/2 t. orange zest, and the salt in mixing bowl. pour in half-and-half and stir quickly to mix.
  • 2 combine cherries, 1 cup water, the sugar, orange juice, and remaining 1/2 t. orange zest in 10-inch skillet. cover and heat to boiling.
  • 3 drop batter onto cherries, making 6 dumplings. reduce heat to maintain steady simmer. cover and cook until toothpick inserted into dumpling comes out clean, 20-25 minutes. serve immediately, with cream, if desired.

Crab Melon Balls W/lemon Dressing

  • 1 lb crabmeat, picked clean
  • 1/3 cup lemon juice
  • 1/2 cup olive oil
  • 1 teaspoon fresh ground black pepper
  • 1 cantaloupe, peeled seeded (cut in small chunks or balls)
  • 1 medium apple, peeled cored julienned
  • salt and pepper, to taste
  • 2 lemons
  • 1 tablespoon olive oil

Recipe

  • 1 place the crabmeat into a medium bowl.
  • 2 in a separate small bowl, whisk lemon juice, olive oil and black pepper.
  • 3 pour about two-thirds of the lemon dressing over the crabmeat and toss lightly until combined. add melon balls and apple. check the seasoning and adjust as needed. add salt and pepper to taste. chill.
  • 4 remove the zest from the two lemons and cut into fine julienne strips. place in a small saucepan and add cold water to cover. bring to the boil over medium heat. remove from heat and drain the zest.
  • 5 return the zest to the saucepan and again add cold water to cover. bring to a boil again. remove from heat and drain. plunge zest into ice water. drain thoroughly.
  • 6 drizzle with olive oil and season with salt and pepper.
  • 7 to serve, spoon crab mixture into chilled individual serving dishes and garnish with lemon confit.

Cauliflower Wraps

  • 2 small heads cauliflower
  • 1 -2 tablespoon lemon juice
  • 1 -2 teaspoon dijon mustard (optional)
  • 1 teaspoon salt

  • 1 cup mayonnaise (i will *only* use awesome almond spread #124173 here, but had to put something in to please the syst)
  • 8 flour tortillas, warmed (i prefer whole wheat)

  • 1 steam the cauliflower until very soft, approximately 10 minutes.

Deb's Lazy Holobchi ( Cabbage Rolls )

  • 2 cans tomato soup, diluted with 2/3 can of water
  • 1 1/2 lbs lean ground beef
  • 1 medium onion, diced

  • 1 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon dill weed
  • 1 1/2 cups rice

Recipe

  • 1 cook rice according to package directions. let cool. mix the rice mixture well and set aside.
  • 2 shave the ribs off the cabbage leaves and cut the leaves into 3 to 4 inch strips.
  • 3 pour some diluted tomato soup into the bottom of a roasting pan.
  • 4 layer about 1/3 of the cabbage followed with 1/2 of the rice mixture.
  • 5 layer with another 1/3 of the cabbage and generously pierce the cabbage leaves with a fork pour about 1/2 of the remaining soup over the top of the cabbage and repeat the layer of rice and cabbage.
  • 6 pour the remainng soup over the top layer of pierced cabbage.
  • 7 bake covered in oven at 350f oven for 2 1/2 hours or until cabbage turn a golden color.

Cauliflower With Tahini Sauce

  • 1/3 cup tahini (sesame paste)
  • 1/4 cup water
  • 1/4 cup fresh lemon juice
  • 1 tablespoon chopped fresh flat leaf parsley
  • 2 garlic cloves, crushed
  • salt & freshly ground black pepper
  • vegetable oil, to fry
  • 1 large cauliflower head, cut into medium florets

Recipe

  • 1 1. to make the tahini sauce, place the tahini, water, lemon juice, parsley and garlic in a medium bowl and stir until smooth. taste and season with salt and pepper. cover and set aside until serving.
  • 2 2. heat the oil in a medium saucepan over medium-high heat (if deep frying - see note below).
  • 3 3. add half the cauliflower to the hot oil and fry, turning occasionally, for 8 minutes or until golden brown. remove with a slotted spoon and transfer to a plate lined with paper towel to drain. repeat with remaining cauliflower. place the fried cauliflower on a serving plate and drizzle with the tahini sauce. serve immediately.
  • 4 notes:.
  • 5 the original recipe suggested deep frying the cauliflower but i recommend reducing the oil to make this lower in fat. alternatively, the cauliflower could be baked in the oven.
  • 6 the tahini sauce (step 1) can be made up to 2 days ahead and kept in an airtight container in the fridge.

California Breakfast Bread

  • 7 allow bread to cool at least 8 hours before slicing and toasting this bread.

Cauliflower With Leeks And Sun-dried Tomatoes

  • 1 to prepare citrus mayonnaise, combine first 5 ingredients in a small bowl.
  • 2 to prepare the sandwiches, sprinkle chicken with salt and pepper.
  • 3 heat a large non stick skillet over medium-high heat and add chicken. coat skillet with cooking spray if desired.
  • 4 cook chicken 5 minutes on each side.
  • 5 reduce heat to low.
  • 6 cover and cook 5 more minutes until done. no pink is showing.
  • 7 remove chicken from skillet and cut diagonally across grain into thin slices.
  • 8 spread 1 tablespoon of citrus mayonnaise on each of 4 bread slices.

  • 1 1/2 cups sugar
  • 1 1/2 cups corn syrup ()
  • 1/3 cup water
  • 1/4 cup honey (strained)
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 1 1/2 cups almonds

Recipe

  • 1 chop toasted almonds and strain honey set aside.
  • 2 mix sugar, syrup and water together.
  • 3 place over heat and boil until brittle when tested in very cold water.
  • 4 while syrup is cooking beat egg whites stiff, add honey and beat thoroughly.
  • 5 add hot syrup mixture slowly to egg mixture beating constantly.
  • 6 continue beating for 5 minutes until mixture thickens then add flavoring and nuts.
  • 7 pour immediately into a shallow well buttered 10 x 10 pan.
  • 8 let stand several hours until set and cooled.
  • 9 cut and wrap in waxed paper.
  • 10 a presentation you can do is dip one side of nougat into melted chocolate and set on wax paper to cool completely before wrapping in wax paper or serving.

Chocolate Sorbet (rich And Creamy)

Ingredients

  • 3 cups water
  • 1 1/4 cups sugar
  • 3 tablespoons light corn syrup
  • 2/3 cup unsweetened cocoa powder
  • 2 ounces semisweet chocolate
  • 1 tablespoon vanilla extract

Recipe

  • 1 in a saucepan, combine the water, sugar, and corn syrup; place pan over low heat and stir until the sugar dissolves.
  • 2 increase the heat to medium; bring to a boil; cook 2 minutes.
  • 3 decrease heat to low; whisk in the cocoa and simmer 2 minutes.
  • 4 remove from heat; add in the chocolate and stir until it is completely melted and the mixture is smooth.
  • 5 cool to room temperature.
  • 6 stir in the vanilla; cover and chill at least 1 hour.
  • 7 stir the cooled mixture; freeze in 1 or 2 batches in an ice cream maker by following the manufacturer’s directions.

  • 1 heat oven to 400 degrees f.
  • 2 line 30 miniature muffin cups with paper baking cups or spray bottoms only with no-stick cooking spray.
  • 3 combine flour, oatmeal, brown sugar, cocoa, baking powder, and baking soda; mix well.
  • 4 add combined bananas, milk, margarine, egg whites and vanilla, mixing just until moistened.
  • 5 fill prepared cups almost full.
  • 6 bake 10 to 12 minutes or until wooden pick inserted in center comes out clean.
