Cottage Lunch Salad

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • Servings: 2
  • 6 large lettuce leaves (i use iceberg)
  • 1 cup fat-free cottage cheese
  • 2 spring onions, chopped
  • 1 stalk celery, from the heart chopped
  • 1 large red radish, chopped
  • 1/2 teaspoon dried dill
  • salt & freshly ground black pepper
  • 1 large plum tomato, sliced
  • 1 large red radish, sliced
  • 8 -10 thinly sliced peeled cucumbers

Recipe

  • 1 arrange 3 large lettuce leaves on each of two plates, set aside.
  • 2 place cottage cheese in a bowl and add chopped spring onions, radish, celery, dried dill and salt and pepper to taste.
  • 3 mix well.
  • 4 place half of cottage cheese mixture on top of lettuce on each plate.
  • 5 garnish with sliced radish, cucumber and tomatoes.
  • 6 sprinkle salt and pepper to taste over garnishes.

Cottage Pizza

  • 1 flour tortilla
  • 1/3 cup cottage cheese
  • 1/4 cup spaghetti sauce
  • 1 cup spinach, thawed and drained

Recipe

  • 1 preheat oven to 450 degrees f.
  • 2 spread sauce over tortilla leaving room for a"crust".
  • 3 put spinach on top.
  • 4 spoon cottage cheese on top of spinach.
  • 5 bake in oven for 6 minutes.

Dad's Tex-mex Chili

Ingredients

  • Servings: 6
  • 1 lb ground beef
  • 1 1/2 cups onions (finely chopped)
  • 1 garlic clove
  • 1 (15 ounce) can tomato sauce
  • 1 cup salsa
  • 1 1/2 tablespoons cider vinegar
  • 1/2 tablespoon brown sugar (packed)
  • 2 teaspoons worcestershire sauce
  • 1/4 teaspoon ground black pepper
  • 3 (15 ounce) cans kidney beans (rinsed and drained)
  • 2 cups frozen corn

Recipe

  • 1 fry onion, garlic and ground beef until onions are tender and beef is browned.
  • 2 drain off fat.
  • 3 put ground beef mixture into large pot, with the rest of the ingredients.
  • 4 simmer for 3 to 4 hours.
  • 5 sometimes i even put it in the slow-cooker for 7 to 8 hour but then i leave out beans and corn until just before serving.

Dad's Potato Soup

Ingredients

  • Servings: 4
  • 4 large potatoes
  • 2 teaspoons olive oil or 2 teaspoons bacon grease
  • 1 onion
  • 2 cups milk
  • 1/4 cup sour cream
  • 4 slices bacon (cooked)
  • 2 cups chicken broth

Recipe

  • 1 peel onions and dice.
  • 2 in a large sauce pan, saute onions in olive oil or bacon grease until translucent.
  • 3 peel potatoes and dice.
  • 4 add potatoes and chicken broth to onions.
  • 5 bring to a boil, reduce heat and cook until potatoes are tender (30-45 minutes).
  • 6 add sour cream, milk.
  • 7 break bacon into one or two inch parts and add to pan.
  • 8 return to a boil, then simmer 30 minutes.

Bourbon Baked Beans

Total Time: 3 hrs Cook Time: 3 hrs

Ingredients

  • Servings: 8
  • 1 1/2 lbs navy beans or 1 1/2 lbs great northern beans
  • 8 cups water
  • 1 cup smoked bacon, diced
  • 1 large onion, diced
  • 4 tablespoons tomato paste
  • 3 tablespoons molasses
  • 2 teaspoons hot dry mustard
  • 1 cup ketchup
  • 1/2 cup bourbon
  • 1 cup brown sugar
  • salt
  • pepper

Recipe

  • 1 bring the beans and water to a boil.
  • 2 turn off the heat, cover and let sit for one hour. drain.
  • 3 add enough water to cover the beans by about four inches. bring back to a boil.
  • 4 reduce the heat to a simmer and cook for about 30 to 40 minutes or until the beans are almost cooked.
  • 5 drain, reserving three to four cups of the cooking liquid.
  • 6 in a large stovetop and overproof dutch oven, cook the bacon until crispy.
  • 7 add the onion and cook until soft.
  • 8 stir in the tomato paste, molasses, mustard, ketchup, bourbon and brown sugar.
  • 9 add the beans and three cups of the reserved cooking liquid.
  • 10 place in a 300 f (150 c) oven for two and a half to three hours, stirring occasionally. (if mixture becomes too dry, add more of the reserved liquid).
  • 11 add salt and pepper to taste.
  • 12 serve.

Chrissy's Irish Soda Bread

Ingredients

  • 6 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 1/2 cups raisins
  • 1/4 cup margarine
  • 3 1/2 cups buttermilk
  • caraway seed (optional to taste)

Recipe

  • 1 preheat oven to 325-350.
  • 2 sift first 5 ingrediants together.
  • 3 blend in margarine.
  • 4 add raisins and caraway seeds.
  • 5 add buttermilk to make a medium soft dough.
  • 6 kneed or mix until spongy; dough will be wet.
  • 7 divide into 2 greased and floured loaf pans.
  • 8 bake for about 1 hour and 15 minutes - knife inserted into center should come out dry.
  • 9 optional - brush top with milk while cooling; will soften crust and make it easier to slice.
  • 10 remove from pans while warm.

Cottage Cheese Spread

  • 2 tablespoons miracle whip, heaping

Carrot And Chickpea Salad

Ingredients

  • Servings: 4
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • 2 tablespoons vegetable oil
  • 1/2 cup slivered almonds
  • 2 cups fresh cilantro, leaves and stems packed
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup extra virgin olive oil
  • kosher salt
  • fresh ground black pepper
  • 2 (15 ounce) cans chickpeas, drained and rinsed
  • 1 lb carrot, peeled and coarsely shredded

Recipe

  • 1 in a food processor, combine the lemon juice with the minced garlic and let stand 15 minutes.
  • 2 meanwhile, in a large skillet heat the vegetable oil over medium heat; add almonds and toast, while stirring, until golden, about 4 minutes; drain almonds on paper towels.
  • 3 place half the almonds in the food processor along with the cilantro, cumin, smoked paprika, and cayenne; pulse to chop.
  • 4 add the olive oil and process to a paste; season with salt and pepper.
  • 5 transfer to a large bowl, add chickpeas and carrots and toss.
  • 6 garnish with remaining almonds.
  • 7 to make mjm: transfer dressing (paste) to a large bowl and toss with chickpeas. divide chickpea mixture among 4 1-quart mason jars. layer in carrots, then almonds. close jars and refrigerate. shake to mix just before serving.

  • 2 tablespoons cocoa powder, heaping
  • 1 dash salt
  • 2 (16 ounce) packages pillsbury refrigerated biscuits (2-3 pkg)

Recipe

  • 1 mix all ingredients together in a saucepan.
  • 2 add 2 cups water and stir over medium heat until slight boil.
  • 3 simmer while buscuits cook.

Carrot And Parsnip Stir Fry

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 tablespoon regular sesame oil
  • 1/2 tablespoon vegetable oil (read *note)
  • 3/4 lb small parsnip, peeled and julienned (about 3-inch long-approximately 2 cups)
  • 3 medium carrots, peeled and julienned (about 3-inch long)
  • 2 tablespoons sake
  • 1 tablespoon mirin
  • 1 pinch sugar
  • 1 tablespoon shoyu
  • 1/2 cup almonds (sliced or slivered)
  • 2 tablespoons green onions (optional) or 2 tablespoons fresh chives (optional)

Recipe

  • 1 *note: for a little bit more "depth", you can substitute one half to one teaspoon of toasted sesame oil for part of the sesame oil or vegetable oil.
  • 2 in a large wok, heat up both oils on high heat.
  • 3 add the parsnips and carrots, lowering heat to medium and stir frying until light golden.
  • 4 turn up the heat to high and add the sake, mirin, and pinch of sugar. cook until liquid is absorbed.
  • 5 add the shoyu and almonds and stir fry an additional 30 seconds to 1 minute, stirring constantly so almonds don't burn.
  • 6 garnish with green onions or chives if desired.
  • 7 serve hot.

Dad's Potato Pancakes

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 5 big potatoes
  • 1 big onion
  • 1 tablespoon caraway seed
  • 1 tablespoon salt
  • 2 eggs
  • 1/2-3/4 cup flour

Recipe

  • 1 grate together potatoes and onion (or just do it in the food prossessor) add next 3 ingredients and mix well.
  • 2 add flour to thicken and mix well.
  • 3 cover bowl with a plate (not air tight) and let stand 30 min.
  • 4 fry in little oil by tablespoons or a little bigger till lightly brown on one side,turn and fry again til golden.

Cheesy Ham, Spinach And Polenta Torte

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 1 1/2 cups yellow cornmeal
  • 5 cups water
  • 2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
  • 1/4 lb smoked ham (i use leftovers or just go to your deli and get a couple of slices)
  • 1/3 cup parmesan cheese
  • 1 1/2 cups mozzarella cheese
  • 1 medium onion (fine chopped)
  • 2 teaspoons minced garlic
  • 2 tablespoons olive oil
  • salt
  • pepper

Recipe

  • 1 filling -- in a large sauce pan on medium high heat, add the olive oil, onion, garlic and saute a couple of minutes until tender. add in the spinach, ham, pepper, salt (but go easy, ham is salty) and cook about 3-4 minutes until everything is well combined.
  • 2 polenta -- in a large pot, bring 4 cups of water to a boil. add the remaining cup to the corn meal and mix well. then slowly add the corn meal mix into the boiling water and simmer over medium heat for 8-10 minutes stiring all the time until thick and creamy. remove from the heat.
  • 3 casserole -- heat your oven to 400 and make sure you butter, not oil your casserole dish well. now if you are using a spring form pan, line with aluminum foil and then butter the foil.
  • 4 spread 1/3 of the polenta in the dish or pan and then cover with 1/2 of the spinach mixture. top that with 1/2 of the parmesan and 1/3 of the mozzarella. next layer -- 1/3 more polenta, then the remaining spinach, then the remaining parmesan and 1/3 more of the mozzarella. finish off with the last 1/3 of the polenta and the rest of the mozzarella.
  • 5 bake -- 400 degrees for 30 minutes. make sure you let it rest for 10 minutes.
  • 6 if using a spring form, just remove the sides, but a casserole dish works just as well. this can be a side dish or easily a main dish.

Chocolate And Cranberry Biscotti

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 cup almonds, finely ground
  • 3 tablespoons dutch-processed cocoa powder
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/3 cup sugar
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • 1/3 cup dried cranberries
  • chocolate, melted for drizzling

Recipe

  • 1 preheat oven to 350 degrees and arrange a rack in the center of the oven. line a baking sheet with parchment paper.
  • 2 whisk together flour, ground almonds, cocoa powder, baking powder and salt in a medium bowl.
  • 3 beat egg and sugar with a handheld or standing mixer on medium-high speed until pale and thick, about 5 minutes. beat in vanilla and almond extracts. reduce speed to low, and gradually add flour mixture. beat until no traces of flour remain. stir in cranberries. the dough will be very wet and sticky.
  • 4 scrape the dough onto the prepared baking sheet, forming a thick line in the center. wet your hands and pat dough into a 9-x-3-inch rectangle. bake until puffed and dry to the touch, about 25 minutes. cool on pan for 15 minutes; keep oven on. peel off parchment and carefully transfer rectangle to a cutting board. cut crosswise into 1/3-inch-thick slices.
  • 5 lay slices flat on unlined baking sheet, and bake until dry, about 10 minutes. flip slices and bake for 10 minutes more. let cool completely. cookies will crisp as they cool.
  • 6 drizzle with melted chocolate if desired.

Cottage Salad

  • 1 (24 ounce) carton cottage cheese
  • 1 1/2 cups chopped tomatoes
  • 1 cup diced cucumber
  • 1/2 cup chopped red pepper
  • 1/2 cup chopped yellow pepper
  • 2 sliced green onions
  • 1/3 cup toasted sunflower seeds
  • 1 leaf lettuce

Recipe

  • 1 mix all ingredients in a bowl.
  • 2 line plates with lettuce.
  • 3 scoop the salad onto the lettuce.

Chicken Salad With Papaya, Red Pepper And Pecans

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 8 cups romaine lettuce, torn up (or mixed greens)
  • 2 medium ripe papayas, peeled, seeded and cut up into cubes
  • 1 large red bell pepper, cut into 2-inch thin slices
  • 3 scallions, thinly sliced
  • 1/2 cup fresh lovage, stems and leaves, minced (optional)
  • 3/4 lb boneless skinless chicken, cooked, cut into bite size pieces (read *note) or 3/4 lb firm tofu (read *note)
  • 1/4 cup fresh lime juice
  • 2 tablespoons fresh chicken broth or 2 tablespoons vegetable broth
  • 1 tablespoon clover honey, softened
  • 2 garlic cloves, minced (i prefer elephant garlic for a milder flavor)
  • 1 teaspoon dijon mustard, to taste
  • 3 tablespoons extra virgin olive oil
  • 1/3 cup pecans, toasted and coarsely chopped

Recipe

  • 1 *note: substitute 1 pound firm tofu for the chicken. remove excess water by weighing down the tofu under a heavy pan. grill the tofu with a little bit of cooking oil and proceed with recipe as indicated.
  • 2 combine the lettuce, papaya, bell pepper scallions and lovage in a large serving bowl.
  • 3 in a glass measuring cup whisk together the lime juice, broth, honey, garlic and mustard. slowly add the olive oil by pouring into the measuring cup and whisking until blended. adjust seasonings, adding a bit of salt and pepper.
  • 4 pour the salad dressing over the salad, toss gently, then add the chicken and toss some more. top salad with 2 tablespoons of the toasted pecans and serve the remaining pecans on side as garnish.

Cottage Cheese With Banana And Blueberries

  • 1 cup low fat cottage cheese
  • 1 -2 teaspoon honey, if you prefer to sweeten
  • 1/3 ripe banana, sliced
  • 2 -3 tablespoons fresh blueberries or 2 -3 tablespoons sliced strawberries

Recipe

  • 1 slice banana.
  • 2 top cheese with banana and berries.
  • 3 if using honey, either mix in with cheese first or drizzle on top.

Dad's Special C-mas Eve Hot Chocolate

Total Time: 5 mins Preparation Time: 1 min Cook Time: 4 mins

Ingredients

  • Servings: 4
  • 5 cups homogenized milk
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sugar
  • 2 ounces bittersweet chocolate (not unsweetened) or 2 ounces semisweet chocolate, chopped (not unsweetened)
  • 1 pinch salt
  • 4 fluid ounces kahlua

Recipe

  • 1 bring milk, cocoa powder and sugar to simmer in heavy large saucepan over medium-high heat, whisking frequently.
  • 2 add chocolate; whisk until melted and smooth.
  • 3 add salt.
  • 4 bring to simmer, whisking constantly until frothy.
  • 5 mix in kahlua at last minute if desired.
  • 6 ladle into 4 mugs, top with whip cream if desired, and sprinkle with grated chocolate, cinnamon or marshmallows as desired.

Banana Bread

Ingredients

  • 3 -4 overripe bananas
  • 1/4 cup melted margarine
  • 1 egg
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups flour

Recipe

  • 1 mash bananas with fork. stir in other ingredients. pour into greased and floured loaf pan. bake at 325 degrees for 1 hour. pecans my be added to batter or sprinkled over top when you pour it into the pan if you wish. makes 1 loaf.

Dad's Rhubarb Custard Pie

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 1/2 unbaked pie shell
  • 1 cup of cut rhubarb, in 1 inch pieces
  • 1 cup sugar
  • 2 large eggs, beaten
  • 1 cup whole milk, do not substitute
  • 1 teaspoon cinnamon

Recipe

  • 1 cut the rhubarb, and place into your unbaked pie shell.
  • 2 cover the rhubarb with the 1/2 cup of sugar.
  • 3 mix your beaten eggs, 1/2 cup of remaining sugar, along with your whole milk.
  • 4 pour this mixture over your rhubarb and sprinkle with the cinnamon.
  • 5 bake at 350 degrees for 50-60 minutes, let cool before serving, this will allow the custard to set.
  • 6 note: it is important that you don't put more rhubarb in than the recipe calls for, rhubarb is very watery, and will cause the custard to not set. also, not using whole milk will result in the same outcome.
  • 7 if you are having problems with the pie not setting, try adding 1 tablespoon of flour, by tossing the rhubarb in it before putting into the pie shell.

Chicken Dippers

Ingredients

  • 1 cup flour
  • 2 eggs
  • 1 cup oatmeal
  • 4 boneless skinless chicken breasts, sliced into1/2 inch wide pieces
  • salt and pepper

Recipe

  • 1 preheat oven to 400°f
  • 2 set up a breading station by putting the flour, in a baking dish. whisk eggs and pour into another baking dish and sprinkle oatmeal into a 3rd baking dish.
  • 3 dip the chicken pieces into the flour first, shaking off any excess. then into the egg mixture, again shaking off the excess and finally into the oatmeal.
  • 4 lay on a baking sheet and bake for 15-20 minutes, or until golden brown on the outside and cooked through.

Cottage Garden Salad

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • Servings: 2
  • 1 head lettuce, washed and shredded
  • 2 baby carrots, diced
  • 75 g red cabbage, finely shredded
  • 100 g shelled garden peas, blanched
  • 1 shallot, finely chopped
  • 2 tomatoes, chopped
  • 2 courgettes, thinly sliced and blanched
  • handful alfalfa sprout
  • handful of chopped mixed fresh herbs

Recipe

  • 1 mix the salad ingredients together in a large salad bowl.
  • 2 dress with a herb vinaigrette.

Chicken Salsa Bake

Total Time: 47 mins Preparation Time: 2 mins Cook Time: 45 mins

Ingredients

  • Servings: 2
  • 2 -6 boneless skinless chicken breasts
  • 1 (15 ounce) jar salsa (i like to use mild)

Recipe

  • 1 heat oven to 375.
  • 2 spoon a thin layer of salsa on the bottom of cookie sheet.
  • 3 put a single layer of chicken on top of salsa, and spoon more salsa ontop of chicken.
  • 4 bake for 25 minutes.
  • 5 flip chicken over, and bake for another 20 minutes, or untill juices run clear.

Cottage Cheese Spinach Salad

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • Servings: 10
  • 1 (10 ounce) package fresh spinach
  • 1 (12 ounce) carton cottage cheese
  • 1/2 cup sugar
  • 3 tablespoons vinegar
  • 2 teaspoons prepared horseradish
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard

Recipe

  • 1 in a large serving bowl layer spinach and cottage cheese.
  • 2 in a small bowl, combine remaining ingredients.
  • 3 drizzle over salad and toss to coat.
  • 4 if you are not planning to serve the entire salad only put dressing on what you plan to eat.
  • 5 the leftovers can be stored w/o the dressing on for later.
  • 6 i also used more horseradish as we like things to have a little bit of a bite to them.

Dad's Macaroni And Cheese

Ingredients

  • Servings: 4
  • 2 cups whole wheat pasta shells, uncooked
  • 10 3/4 ounces campbell's tomato soup
  • 1 (10 3/4 ounce) 1% low-fat milk (fill the soup can)
  • 3 cups low-fat cheddar cheese (grated)
  • salt

Recipe

  • 1 cook macaroni according to package directions. preheat oven to 350°f.
  • 2 pour can of tomato soup into a casserole dish and pour can of milk into same casserole dish, whisk together. add 3/4 of the cheese to the casserole and mix.
  • 3 drain macaroni and add to tomato/cheese mixture, stir. put remaining cheese on top and cover. bake at 350 f for 30 minutes until bubbly.

C G's Baked Barbecue Beans

Ingredients

  • Servings: 6
  • 1 (53 ounce) can lamb and beans (van camp's lamb and beans of course!)
  • 4 -5 slices crisp cooked bacon
  • 1 medium yellow onion, diced small
  • 1/4 cup dark molasses
  • 1/2 cup ketchup
  • 1 tablespoon dijon mustard
  • 1 teaspoon liquid smoke
  • 2 tablespoons brown sugar or 1 tablespoon honey
  • 1 tablespoon worcestershire sauce
  • 1 dash garlic powder

Recipe

  • 1 fry the bacon, set aside to drain and cool then break up into little pieces.
  • 2 preheat oven to 350 degrees.
  • 3 reserve 2 tablespoons of the bacon fat and sautè the onion until softened.
  • 4 add the beans, sauteed onions along with the remaining ingredients to a large oven proof casserole dish. stir in the crumbled bacon and combine.
  • 5 cover and bake for about 30 minutes or until bubbly.
  • 6 note: for best results, prepare the casserole up through step #4 as early as possible in the morning or the night before, cover, refrigerate then bake later in the day (or next day.).

Bourbon Barbecue Sauce

Ingredients

  • 2 tablespoons butter
  • 2 -4 fresh minced garlic cloves
  • 1 large onion, minced
  • 3 tablespoons cider vinegar
  • 1 cup chili sauce (heinz is good)
  • 1 cup unsweetened pineapple juice (juice from crushed pineapple is good)
  • 1 cup crushed pineapple (drained, use the juice)
  • 4 tablespoons brown sugar
  • 2 tablespoons worcestershire sauce
  • 1/2 tablespoon mustard powder
  • 2 tablespoons lemon juice
  • 1 cup jack daniels bourbon
  • tabasco sauce (to taste)

Recipe

  • 1 grease a rimmed baking sheet with vegetable oil.in a small bowl toss together the almonds, chocolate chips and apricots. put them on the baking sheet spreading them out into an even single layer across the entire baking sheet.
  • 2 in a medium heavyduty saucepan, stir together the sugar and water. cook over medium-high heat stirring until sugar disolves.very important:do not stir after that, as additional stirring will create a grainy texture to your candy. instead, using a pastry brush dipped in warm water, brush the sides of the pan incorporating any of the sugar that has stuck to the sides of the pan. if sugar crystals begin to form on the edges of the pan, place the lid on for 2 to 3 minutes (being careful not to allow the pan to overflow) so that the steam will evaporate the crystals. if sugar crystals are not brushed down, this will lead to large globs of hard sugar on/in your syrup and your syrup will not carmelize. continue to wipe down the edges and cook until the syrup turns golden brown, about 15 to 20 minutes. towards the end of cooking time the syrup must be watched closely as it changes from golden to dark very quickly.

Cabbage And Bell Pepper Coleslaw

  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 1/4 cup vegetable oil
  • 1/4 teaspoon garlic powder (or to taste)
  • 7 cups green cabbage, shredded (use 1 medium cabbage)
  • 1 small green bell pepper, seeded and thinly sliced
  • 1 small red bell pepper, seeded thinly sliced
  • 1 onion, thinly sliced
  • 1 large carrot, peeled and coarsley shredded (squeeze out any excess moisture with hands before adding to the salad)

  • 1 orange, juice of

  • 1 tablespoon baking powder
  • salt, a pinch
  • 1 1/2 cups milk
  • 1 egg, at room temperature, lightly beaten
  • 3 tablespoons unsalted butter, melted (plus butter as needed)

Recipe

  • 1 syrup: combine the blueberries, sugar, orange juice, and cinnamon in a saucepan; stir well.
  • 2 bring to a boil, then decrease heat to low and simmer, uncovered, until slightly thickened, about 8 minutes.
  • 3 remove from heat and set aside.
  • 4 waffles: preheat a waffle iron.

Daddy's Fattening French Toast

  • 1 in a bowl, put two eggs, 2 tablespoons milk, and 1/4 teaspoon ground cinnamon. whisk until incorporated.
  • 2 heat medium sized pan on medium temperature.
  • 3 take a piece of bread and dip into egg mixture. coating each side liberally with mixture.
  • 4 put in pan and cook on each side until golden brown or until egg mixture is no longer runny.
  • 5 place on plate and generously coat with butter or margarine (we use margarine, approx 1/2 tablespoon).
  • 6 sprinkle each piece of toast with a good dusting of powdered sugar.
  • 7 add your desired amount of syrup.
  • 8 repeat with other pieces.
  • 9 after you have finished with the toast and have made your toast tower, dollop (or spray as we use reddi whip) plenty of whipped cream on top.
  • 10 this makes approximately 4-5 pieces. 3 pieces is generally a serving for us.

Recipe

  • 1 preheat electric griddle to 350 degrees f, and spray griddle with non-stick cooking spray.
  • 2 mix the first five ingredients until smooth.
  • 3 mix in the two cans corn.add a little more bisquck if the batter is a little too runny; should be thick.
  • 4 spoon batter onto griddle, making cakes 2-3" in diameter. turn over when bubbles show throughout the cake, then complete grilling on other side until it is brown (should only take 30 seconds or so on second side).
  • 5 serve as regular pancakes with butter, syrup, etc., however you like it--other things to try would be applesauce or grape jelly!

Bourbon Peach Barbecue Sauce (and Its Uses!)

  • 2 (2 lb) lamb tenderloin or 2 (2 lb) other meat or 2 (2 lb) seafood, of your choice
  • 1 tablespoon vegetable oil
  • 1 tablespoon old bay seasoning

  • 1 cup peach preserves
  • 1/4 cup bourbon
  • 1/4 cup ketchup
  • 1 1/2 teaspoons old bay seasoning

Recipe

  • 1 rub lamb or other meat with vegetable oil, then season with 1 tablespoon old bay and garlic. a milder meat, such as chicken, may need less seasoning, so i would recommend using your discretion.
  • 2 heat grill to medium.
  • 3 combine preserves, bourbon, ketchup and 1 1/2 teaspoons old bay in a small bowl.
  • 4 grill meat over medium heat until done. for the lamb this would be about 25-30 minutes, or until internal temperature reaches 160°f.
  • 5 brush with sauce during the last 2 minutes of cooking.
  • 6 serve with remaining sauce.

  • 1 (15 ounce) can bean sprouts
  • 1 (8 ounce) can water chestnuts
  • 3 tablespoons molasses
  • 1/2 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon flour

Recipe

  • 1 pour oil into a preheat pan or wok.
  • 2 add onions and celery.
  • 3 cook until tender.
  • 4 stir in chopped cabbage and scallions and cook for one minute.
  • 5 remove vegetables from heat and set them aside.
  • 6 in a large sauce pan under medium heat, simmer chicken in water/broth until thoroughly cooked.

  • 1 disclaimer: this should go without saying, but - do not drink this. this mixture is not meant to be consumed by humans or animals. it should only be used to water your christmas tree.
  • 2 important: do not mix vinegar and bleach together directly - if you mix them directly the mixture will produce toxic vapors. mix the vinegar with the water first, then proceed with the rest of the recipe instructions.
  • 3 in a large bowl, mix together the water and the vinegar.
  • 4 add the corn syrup or the sugar, and stir well until all is combined or the sugar is dissolved. if you are using sugar, it may help to use half hot water first to dissolve the sugar, then add the second half, using cold water.
  • 5 add the bleach, if using, and mix well to combine.
  • 6 place your christmas tree securely in the christmas tree stand.
  • 7 place a penny in the reservoir of the christmas tree stand, then fill it with the water mixture.

Recipe

  • 1 in large mixer bowl combine 3 cups of the flour and the yeast.
  • 2 heat 2 1/2 cups water, sugar, salt and shortening just till warm 115-120 degrees f.
  • 3 stirring constantly to melt shortening.
  • 4 add to dry mixture.
  • 5 beat at low speed with mixer for 1/2 minute, scraping bowl.
  • 6 beat 3 minutes at high speed.
  • 7 by hand, stir in enough remaining flour to make a soft dough.
  • 8 knead on floured surface till smooth (10 to 12 minutes.) shape into a ball.
  • 9 place in greased bowl and turn once.
  • 10 cover, let rise till double 1-1 1/2 hours.
  • 11 punch down, divide in half.
  • 12 cover let rest 10 minutes.

Recipe

  • 1 fill a tall pot with 2 to 3 inches of water. bring to a boil.
  • 2 add corn ears, cover pot reduce to simmer and cook 3 to 5 minutes depending on sweetness of corn and how crisp you like it.

  • 4 scrape corn from cobs by running knife along cob and balancing the corn upright on fat end of cob.

Creamy Beet And Apple Quick Slaw

  • 1 scald milk and let cool to 105-115°f.
  • 2 combine cornmeal and 1 cup boiling water in large mixing bowl and allow to stand 10 minutes.

  • 1 heat oven to 325°f.

  • 5 cook your prunes until tender (cover with water and simmer until tender).
  • 6 45 minutes before the roast is done, place apples around the roast.
  • 7 30 minutes before roast is done, put prunes around the roast.
  • 8 roast until inner temp reach 170°f (allow 30- 35 minutes per pound).
  • 9 remove roast from oven and cut off the crackling.
  • 10 cover roast, prunes and apples and keep warm.
  • 11 return crackling to hot oven in a metal pan. (raise temp to about 375°f or broil, but if you broil watch closely).
  • 12 spray with cold water again if it hasn't completely crackled.

Caribbean Style Pineapple And Beans Over Rice

  • 1/2 cup worcestershire sauce
  • 1/2 cup brown sugar
  • 1/2 cup jack daniels whiskey
  • 1/2 teaspoon garlic powder
  • 4 chicken breasts or 4 lamb chops

  • 1 mix all the ingredients, except the meat, in a bowl.
  • 2 place the meat in a shallow baking dish or tupperware container.
  • 3 add what ever meat you are using to the marinate, cover and refrigerate overnight.
  • 4 make sure that all the meat is soaking in the marinate.
  • 5 preheat oven to 325 degrees.
  • 6 bring the contents of the dish to room temperature before cooking.
  • 7 bake for 1 hour if using chicken.
  • 8 bake for 1 1/2 hours if using lamb chips.
  • 9 turn meat over half way thru the cooking time.
  • 10 remove the meat from the baking dish and keep warm.
  • 11 strain the marinate into a bowl.
  • 12 in a sauce pan simmer over a medium flame to reduce it by half.
  • 13 once reduced, remove from the heat and stir in 1 tablespoon of butter to make the sauce creamy.

Coconut-honey-gingerbread-squares

  • 50 g desiccated coconut
  • 75 g honey (use a runny variety)

  • 1 pinch clove

Recipe

  • 1 first dry toast your coconut in a skillet until nicely browned and fragrant. let cool.
  • 2 in a big bowl mix honey, applesauce and egg.
  • 3 in a second bowl combine flour, baking powder, spices, sugar, cocoa powder and coconut. add this to the wet ingredients and stir to combine. your dough will be rather soft, but you should be able to knead it. if its too wet for this, add a bit more flour.
  • 4 place dough onto a paper-lined baking sheet and pat into a rectangle of about 1 inch/2 cm in height.
  • 5 bake in the preheated oven at 170°c/350°f for about 25 minutes or until toothpick inserted in the centre comes out clean.
  • 6 allow to cool and slice into about 25 small cubes.
  • 7 if you like you can drizzle the cubes with melted chocolate and add some coconut on top.
