Ingredients

  • 12 ounces cranberry juice concentrate, thawed
  • 3 tablespoons dijon-style mustard
  • 2 tablespoons brown sugar
  • 2 tablespoons lemon juice
  • 4 teaspoons cornstarch
  • 1/4 teaspoon ground cloves

Recipe

  • 1 combine all ingredients in a small saucepan.
  • 2 cook and stir mixture until thick and bubbly.
  • 3 cook and stir 2 minutes more.

Chicken Enchiladas

Ingredients

  • Servings: 4
  • 2 tablespoons oil
  • 1 medium onion, finely chopped
  • 1 teaspoon garlic, minced
  • 1 (28 ounce) can diced tomatoes
  • 1 (4 ounce) can chopped green chili peppers, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon sugar
  • 1 cup cooked chicken, diced
  • 8 corn tortillas
  • 1 cup cheddar cheese, shredded (about 4 ounces)
  • 1/2 cup sour cream, to serve (optional)
  • sliced pitted black olives, to serve

Recipe

  • 1 preheat the oven to 400°f lightly grease a 9 x 13-inch baking dish.
  • 2 heat the oil in a large skillet over med-high heat. add the onion and garlic and sauté for 3 minutes, until softened. stir in the tomatoes, chili peppers, oregano, salt, and sugar. simmer for 15 minutes, stirring occasionally.
  • 3 combine 1/2 cup of sauce with the chicken in a small bowl and set aside.
  • 4 heat the remaining sauce until just boiling. place a tortilla in the sauce to soften. use tongs to remove it, letting the excess sauce drip back into the skillet. place the tortilla on a plate and spread 2 t of the chicken mixture down the center. roll it up and place it seam side down in the prepared baking dish. repeat with the remaining tortillas. pour the remaining sauce over the tortillas and sprinkle with the cheese.
  • 5 bake, uncovered for 20 to 25 minutes, until bubbly and hot. serve hot, topped with dollops of sour cream and a sprinkling of sliced olives.

Canning Sauerkraut

Ingredients

  • 50 lbs cabbage
  • 1 lb canning salt

Recipe

  • 1 remove outer leaves and any undesirable portions from firm mature heads of cabbage; wash and drain. cut into halves or quarters; remove core. use a shredder or sharp knife to cut cabbage into thin shreds about the thickness of a dime.
  • 2 in a large bowl, thoroughly mix 3 tablespoons salt with 5 lbs. shredded cabbage. let salted cabbage stand for several minutes to wilt slightly; this allows packing without excessive breaking or bruising of the shreds.
  • 3 pack salted cabbage firmly and evenly into a large, clean pickling container. using a wooden spoon, tapper or hands, press down firmly until the juice comes to the surface.
  • 4 repeat shredding, salting and packing of cabbage until the container is filled to within 3 to 4 inches of the top. if juice does not cover cabbage, add brine: 1 1/2 tablespoons salt to 1 quart water; bring brine to a boil; cool.
  • 5 cover cabbage with muslin or cheesecloth and tuck edges down against the inside of the container. weight down cabbage under brine. formation of gas bubbles indicates fermentation is taking place. remove and discard scum formation each day. a room temperature of 70 degrees to 75 degrees f is best for fermenting cabbage. fermentation is usually complete in 3 to 6 weeks.
  • 6 to can: bring sauerkraut to a simmer (185 to 210degrees f). do not boil. pack hot cabbage into hot jars, leaving 1/2 inch headspace. remove air bubbles. adjust caps. process pints 15 minutes, quarts 20 minutes, in a boiling water canner.

Cranberry Jello Salad

  • 4 cups fresh cranberries (about 1 and 1/3 pkg)
  • 2 cups sugar
  • 2 cups water
  • 2 (3 ounce) boxes of any red jell-o (i use raspberry)
  • 1 cup chopped nuts (i use pecans)
  • 1 (16 ounce) can crushed pineapple, drained (i use the pineapple chunks and jut cut them in quarters)

Recipe

  • 1 combine first 3 ingredients and bring to boil. stirring constantly until all the berries "pop".
  • 2 and to the cranberry mixture the remaining ingredients and stir well.
  • 3 pour into a mold or dish.

Cranberry Ice

  • 2 (1 lb) cans jellied cranberry sauce
  • 2 cups carbonated lemon-lime beverage

Recipe

  • 1 beat cranberry sauce on high speed with electric mixer until smooth, about 5 minutes.
  • 2 gently stir in lemon-lime soda.
  • 3 divide mixture to fill 2 ice cube trays. freeze until firm.
  • 4 transfer cubes to food processor and mix until frothy.

Recipe

  • 1 stir boiling water into gelatin in large bowlat least two minutes until completely dissolved.
  • 2 stir in cold ginger al.
  • 3 refrigerate about 1 1/2 hours or until thickened (spoon drawn through leaves definite impression) stir in fruit.
  • 4 spoon into a 6-cup mold sprayed with no stick cooking spray.
  • 5 refrigerate 4 hours or until firm.

Ingredients

  • 2 cups warm milk, 110 degrees f
  • 5 1/4 ounces active dry yeast
  • 1 1/2 cups sugar
  • 1 tablespoon sugar
  • 7 cups all-purpose flour (2 tablespoons for every 7 cups)
  • 1 teaspoon salt
  • 1 tablespoon lemon zest, grated
  • 3/4 cup golden raisin
  • 1 teaspoon vanilla extract
  • 10 large egg yolks, lightly beaten
  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon unsalted butter, melted

Recipe

  • 1 make the dough: coat a large bowl with oil and set aside. combine the milk, yeast, the 1 tablespoon sugar, and 1 cup flour in a small bowl and set aside. in the bowl of a standing mixer fitted with a dough hook, combine the remaining 6 cups flour, remaining sugar, salt, lemon zest, and raisins. with the mixer on low speed, add vanilla, egg yolks, 2 eggs, and the yeast mixture. mix on low speed until a smooth, elastic dough forms -- about 10 minutes. add the 1/2 cup butter and mix for 5 more minutes. transfer the dough to the prepared bowl, turning to coat all sides with oil. cover the bowl with a clean, damp kitchen towel and set dough aside to rise in a warm, draft-free place until it doubles in volume -- about 1 hour.
  • 2 shape the loaf: coat two 8-inch round by 4-inch-deep baking dishes with remaining butter and lightly dust with the 2 tablespoons flour, shaking out any excess. set aside. punch down the dough, transfer it to a lightly floured surface, and divide it in half. shape each half into a ball and place them in the prepared dishes. cover with a clean, damp kitchen towel and let rise in a warm place until dough doubles in volume -- about 1 hour. preheat oven to 350°f.
  • 3 bake the bread: beat the remaining egg and lightly brush the top of babkas. bake in the lower third of the oven for 15 minutes. reduce the oven temperature to 300°f and continue to bake until the loaves are golden and sound hollow when tapped -- about 40 more minutes. transfer the finished loaves to a wire rack to cool.

Chili Casserole With Cornbread

  • 1 lb lean ground beef
  • 1 (16 ounce) jar salsa, thick 'n chunky
  • 1 (19 ounce) can dark red kidney beans, drained
  • 1 (14 1/2 ounce) can tomatoes, diced peeled & undrained
  • 1 1/2 cups frozen corn
  • 3 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 (6 1/2 ounce) envelope cornbread mix
  • 1/3 cup milk
  • 1/3 cup shredded cheddar cheese
  • 1 tablespoon green onion, sliced

Recipe

  • 1 heat oven to 400°f in 12-inch skillet, cook ground beef over medium-high heat, stirring occasionally, until thoroughly cooked; drain. stir in salsa, kidney beans, tomatoes, corn, chili powder and cumin. cook 3 to 4 minutes, stirring occasionally, until thoroughly heated.
  • 2 meanwhile, make cornbread as directed on pouch, using milk. spoon cornbread batter around outside edge of ungreased 2-quart glass baking dish. spoon hot beef mixture into center. (casserole will be full.).
  • 3 bake 18 minutes. sprinkle with cheese; bake 4 to 5 minutes longer or until cheese is melted and cornbread is deep golden brown. sprinkle with green onion just before serving.

Cheaters Russian Khrusty

  • 8 ounces egg roll wraps
  • 1 cup confectioners' sugar
  • vegetable oil (for frying)

Recipe

  • 1 cut 1 sheet at a time of egg roll wrappers from corner to corner to form a triangle.
  • 2 fold two corners on long side of triangle to form a smaller triangle (does not have to be precise).
  • 3 in a skillet with about 1" deep oil -- fry a few triangles at a time until they are light golden brown in hot oil. each khrusty only takes 1-2 minutes to reach desired color.
  • 4 warning: watch out as oil splatters.
  • 5 drain on absorbent paper and sprinkle with confectioner's sugar.

Citrusy Rhubarb Sorbet

  • 4 cups chopped rhubarb (about 1 1/4 pounds)
  • 1 cup water
  • 2/3 cup sugar
  • 1/2 cup fresh orange juice (about 2 large oranges)
  • mint sprig (optional)
  • orange rind, strips (optional)

Recipe

  • 1 combine first 4 ingredients in a medium saucepan; bring to a boil. reduce heat, and simmer for 20 minutes or until rhubarb is tender. cool slightly.
  • 2 place rhubarb mixture in a blender, and process until smooth. pour into a bowl, and refrigerate for 2 hours or until thoroughly chilled.
  • 3 pour mixture into the freezer can of an ice-cream freezer; freeze according to manufacturer's instructions.
  • 4 place a freezer-safe bowl in a freezer for 10 minutes. spoon sorbet into bowl; cover and freeze for 4 hours or until firm.

  • 6 cups flour, plus more for kneading
  • 1 tablespoon active dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 bunch green onions or 1 bunch scallion, thinly sliced, and pale green parts only
  • 2 cups warm water
  • 10 1/2 ounces brie cheese, cut into 1/2 in chunks (or camembert)
  • 1 egg, beaten, for glaze
  • sesame seeds, for decorating

Recipe

  • 1 place the flour, yeast, sugar, salt, green onions, and water. mix until a sticky dough forms.
  • 2 knead the dough in a well-floured surface, until dough is elastic and smooth, about 5 minutes.
  • 3 place dough in a greased bowl. cover with plastic wrap and let rise in a warm place until doubled in size, about 11/2 hours meanwhile grease a baking sheet.
  • 4 knead the risen dough to get the air out and divide into 12-16 equal portions.
  • 5 form balls of dough with your hands and place a piece of cheese in center. enclose all of the cheese in the dough and seal the seam well. place on baking sheet seam-side down. repeat with remaining dough.

  • 2 1/2 cups fresh orange juice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1 (85 g) package cranberry jell-o gelatin
  • 1 cup finely chopped mixed dried fruit (apricots, raisins ,dried cranberries)
  • 1 cup toasted walnuts, chopped
  • 1 teaspoon orange zest (optional)

Recipe

  • 1 mix the juice, cinnamon and cloves in a saucepan and bring to a boil-medium-high heat.
  • 2 have dry jello powder in a bowl and add boiling juice,stir at least 2 minutes until the jello is completely dissolved.
  • 3 refrigerate apprx 1 1/2 hours or until thickened (when you draw a spoon through it it will leave an impression).

  • 5 and orange peel (if you are using it).

Deliciously Healthy Paella

Ingredients

  • 1/4 cup olive oil
  • 5 minced garlic cloves
  • 1 large yellow onion, chopped
  • 4 cups vegetable broth
  • 2 cups rice (uncooked)
  • 4 medium tomatoes, skinned, seeded and chopped
  • 1 small red bell pepper, seeded and cut into thin strips
  • 1 small green bell pepper, seeded and cut into thin strips
  • 1 small yellow bell pepper, seeded and cut into thin strips

  • 2 cups artichoke hearts, tough outer leaves removed and quartered
  • 1 lemon

Recipe

  • 1 heat the olive oil in a paella pan and sauté the onion and garlic until the onion is tender and translucent. at the same time, heat the broth in a separate saucepan until simmering.
  • 2 pour the rice into the paella pan and sauté for about 3 minutes.
  • 3 add the bell peppers and tomatoes and cook for a further 3 minutes.
  • 4 add the simmering vegetable broth and cook over medium heat for 20 minutes or until almost tender and almost all the liquid has been absorbed.
  • 5 stir in the peas.
  • 6 sprinkle the artichoke hearts with a few drops of lemon juice and arrange over the rice in an attractive pattern. continue cooking until the liquid has been absorbed and the rice is tender.
  • 7 serve the paella straight from the pan, garnished with lemon wedges.

  • 1 (3 ounce) package raspberry jell-o gelatin
  • 1 cup boiling water

Recipe

  • 1 dissolve both jellos with the boiling water in a large bowl. gently stir in ginger-ale.
  • 2 refrigerate until slightly thickened, about 1 1/2 hours. stir in grapes amd oranges. transfer to a five cup mold that has been coated with non stick cooking spray. do not use a flavored cooking spray or your mold will taste like that spray. cover and refrigerate until firm.

  • 1 mix jello and hot water until dissolved.

Ingredients

  • Servings: 12
  • 2 1/2 cups milk
  • 1 1/2 ounces butter
  • 3 eggs, plus
  • 3 egg yolks
  • 10 ounces granulated sugar
  • 1 tablespoon vanilla extract
  • 6 tablespoons rum
  • 5 1/4 ounces all-purpose flour

Recipe

  • 1 in a saucepan, bring the milk to a simmer, add the butter cut into dices. mix well and let cool to lukewarm.
  • 2 in a bowl, mix the eggs, egg yolks, sugar and vanilla and whisk until foamy. slowly add the rum and flour. add the milk slowly and whisk until smooth. pass it through a sieve if necessary.
  • 3 let the batter rest in the fridge for a couple of hours or overnight. (i make mine the day before).
  • 4 when the batter has rested, preheat the oven to 425f and divide it evenly among the muffin tins, generously coated with cooking spray or well buttered. bake for 45 minutes to an hour.

Cannellini Beans In A Tomato Based Sauce

Ingredients

  • Servings: 8
  • 2 cups canned cannellini beans
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 6 cups chicken stock or 6 cups vegetable stock
  • 800 g canned diced tomatoes
  • 2 teaspoons sweet paprika
  • 1/2 teaspoon allspice
  • 150 g baby spinach leaves
  • salt & fresh ground pepper

Recipe

  • 1 heat oil in pan and saute onions until soft.
  • 2 add stock, tomatoes, paprika, allspice and simmer for 15 - 20 minutes.
  • 3 add beans and stir. heat for 5 minutes.
  • 4 stir in spinach leaves and cook a further 5 minutes until wilted.
  • 5 season and serve.

Ingredients

  • Servings: 5
  • 3 cups rice, cooked
  • 1 (16 ounce) can kidney beans, rinsed and drained
  • 1 medium onion, chopped
  • 1 (4 ounce) can chopped green chilies
  • 2 -3 cloves fresh minced garlic
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon creole seasoning
  • 1/2 teaspoon salt
  • 3 cups shredded cheddar cheese, divided

Recipe

  • 1 set oven to 350 degrees.
  • 2 grease a 2-qt baking dish.
  • 3 in a prepared baking dish, combine all ingredients, except the cheese.

  • 6 remove from oven and sprinkle the remaining 1-1/2 cups cheese.

  • 1 cup flour
  • 1 teaspoon fresh ground black pepper
  • 2 lbs boneless skinless chicken breast halves
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2 tablespoons minced garlic cloves
  • 1 tablespoon shallot (minced)
  • 1 tablespoon fresh basil, chopped
  • 1/2 cup dry wine
  • 3 tablespoons fresh parsley, chopped

Recipe

  • 1 combine flour and pepper in a shallow dish. dredge chicken in flour mixture. heat butter, oil, shallots, garlic and basil over medium heat.
  • 2 add chicken, cook about 3 minute each side.
  • 3 removr chicken and move to warm oven.
  • 4 add wine to pan juices. cook 2 min., scrapping up the good bits.
  • 5 return chicken to pan and cook until sauce reduces nicely. garnish with parsley.

Ingredients

  • 2 1/2 cups water
  • 2 cups cranberries (about 8 ounces)
  • 1 cup sugar
  • 1/4 teaspoon salt

  • 1 add all the ingredients to a saucepan; bring to a simmer over medium-high heat, stirring just until the sugar dissolves.

Cj’s Dusk Patrol Teriyaki Flank Steak

  • 1 lb flank steak
  • 6 ounces beer (your choice, i prefer a mexican beer for this, pacifico works well or another type of mexican beer)
  • 1 tablespoon of minced garlic
  • 1/4 cup teriyaki sauce (i recommend soy vay brand, www.soyvay.com)
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon steak seasoning (i like stubbs bbq spice rub, www.stubbsbbq.com)

  • 1 preparation:.
  • 2 -take a knife and gently cerade the steak in lines about ½ inch apart from each other, so you have even lines, then do the same criss crossing the the lines as to make small boxes on the top of the steak, repeat on second side, but do not go too deep on each side of the steak.
  • 3 -place the steak in a gallon ziploc bag and pour ½ cup of teriyaki sauce in bag, take 1 tablespoon of minced garlic and toss that in the bag, a couple shakes of worcestshire sauce, 8 shakes of the steak seasoning and ¼ cup of beer.
  • 4 -close bag, shake it up to make sure the steak gets covered with all the contents, if you want you can have the steak marinade or you can wait 15 minutes and then toss it on the grill.

  • 1 soak dried cranberries with the mustard and vinegar in a covered jar for 48 hours add extra vinegar if needed but the seeds should stay covered.

  • 1 teaspoon vanilla

Recipe

  • 1 mix flour, soda, salt, sugar, cocoa until well blended.
  • 2 add mayonaise, water, vanilla.
  • 3 beat well by hand or electric mixer for about 5 minutes.
  • 4 pour into greaased, floured or wax-paper lined loaf pan.
  • 5 bake at 350 degrees for about 40 minutes untilit test done with a toothpick inserted in the center.
  • 6 turn loaf out to cool on a rack.

Cranberry Jezebel Sauce

Ingredients

  • 1 cup water
  • 1/2 cup sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 (12 ounce) bag cranberries (fresh or frozen)
  • 1/2 cup pineapple preserves
  • 3 tablespoons prepared horseradish
  • 1 tablespoon dijon mustard

Recipe

  • 1 bring the first 3 ingredients to a boil, stirring often, in a saucepan over medium-high heat.
  • 2 add cranberries.
  • 3 return mixture to a boil. reduce heat and simmer, stirring often, for 10 minutes or until the cranberry skins begin to pop and mixture begins to thicken. remove from heat.
  • 4 stir in pineapple preserves, horseradish and mustard; remove pan from heat and let sauce cool.

  • 1 preheat oven to 400 degrees. from one orange and one lemon, cut 1/8 x 2-inch strips, being careful not to cut into the bitter pith. set aside. from the same orange and lemon squeeze a total of 2 tablespoons juice; set aside.
  • 2 thinly slice remaining orange and lemon; drizzle slices with 1 tablespoon olive oil. place on baking sheet lined with parchment paper; set aside.
  • 3 wash asparagus; break off woody bases at the point where the spear easily bends. place spears in a 15x10x1-inch baking pan. sprinkle with garlic, tarragon, and citrus strips. drizzle with 2 tablespoons olive oil; toss to coat spears. spread in a single layer and season with salt and pepper.

  • 8 large refrigerated biscuits (pillsbury "grands" flaky layers work well)
  • cayenne powder or sweet paprika
  • 1 cup dry wine
  • 2 cups low sodium chicken broth
  • 1 bay leaf
  • 4 boneless skinless chicken breasts
  • 1 tablespoon vegetable oil or 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 lb small mushroom, sliced
  • 1/2 small onion, chopped
  • 2 tablespoons all-purpose flour
  • 3 tablespoons chopped pimiento
  • 1 cup frozen green pea
  • black pepper, to taste
  • 2 tablespoons chopped parsley

Recipe

  • 1 preheat oven according to package directions for biscuits.
  • 2 arrange biscuits on nonstick baking sheet and sprinkle with a little ground cayenne pepper or sweet paprika.
  • 3 bake until golden, remove biscuits from oven and then cool. (10-18 minutes depending on the type biscuit you use).
  • 4 meanwhile, in a medium skillet, bring wine & chicken broth to a boil. add the bay leaf.
  • 5 gently drop in chicken breasts & lower heat to simmer.
  • 6 poach chicken for 10 to 12 minutes.

  • 1 1/4 cups fresh cranberries, halved or 1 1/4 cups frozen cranberries, thawed

  • 1 preheat oven to 400.
  • 2 coat a 12-muffin tin with nonstick cooking spray.
  • 3 whisk the flour with the baking powder and salt and set aside.
  • 4 beat the egg, sugar and margarine with an electric mixer set on medium until smooth.
  • 5 add the orange juice and orange peel and beat again.
  • 6 mix the flour and cranberries into the batter by hand just until combined.
  • 7 spoon the batter into the muffin cups so that each is about two-thirds full.
  • 8 bake for 15 to 20 minutes our until the muffins are lightly browned, puff up and a toothpick inserted in the center comes out clean.
  • 9 cool in the tin set on a wire rack for about 10 minutes.

  • 1 in a large pot, combine soy sauce, vinegar, ground pepper, brown sugar, minced garlic and bay leaves.
  • 2 if using chicken with skin, place skin side down in pot. over high heat and uncovered, bring to a boil.
  • 3 once boiling, immediately turn down to a simmer and cover with lid.

Citrusberry Bircher Breakfast

  • 1 mix the oats, juice, milk, yogurt, currants and honey together in a lage bowl.

  • 4 cups water
  • 5 1/2 cups sugar, measured into separate bowl
  • 1/2 teaspoon butter (optional) or 1/2 teaspoon margarine (optional)
  • 1 (3 ounce) envelope certo fruit pectin

Recipe

  • 1 bring boiling-water canner, half-full with water, to simmer. wash jars and screw bands in hot, soapy water; rinse with warm water. pour boiling water over flat lids in saucepan off the heat. let stand in hot water until ready to use. drain well before filling.
  • 2 place cranberries and water in large saucepan. bring to boil. reduce heat to low; cover and simmer 10 minutes. press through a sieve, if desired. measure exactly 7-1/2 cups prepared fruit into 6- or 8-quart saucepot.
  • 3 stir sugar into prepared fruit in saucepot. add butter to reduce foaming, if desired. bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantlly.
  • 4 stir in pectin quickly. return to full rolling boil and boil exactly 1 minute, stirring constantly. remove from heat and skim off any foam with metal spoon.
  • 5 ladle quickly into prepared jars, filling to within 1/8 inch of tops. wipe jar rims and threads. cover with two-piece lids. screw bands tightly. place jars on elevated rack in canner. lower rack into canner. water must cover jars by 1 to 2 inches; add boiling water if needed. cover; bring water to gentle boil. process 10 minutes. remove jars and place upright on a towel to cool completely. after jars cool, check seals by pressing middle of lid with finger.

  • 6 medium golden delicious apples (3 pounds)
  • 1 teaspoon lemon juice
  • 1 (10 ounce) jar apricot preserves

Recipe

  • 1 prepare pastry:.
  • 2 in medium bowl with fingertips, quickly knead flour, butter, salt, 2 tablespoons sugar, and 2 tablespoons water until dough forms a ball, adding more water if necessary 1 teaspoon at a time.
  • 3 pat pastry into bottom and up side of a 9-inch tart pan with a removable bottom; refrigerate.
  • 4 peel, quarter, and core 3 apples and cut into even 1/8 inch slices to make about 3 cups.
  • 5 in a medium bowl, toss apple slices with lemon juice and 2 tablespoons sugar.
  • 6 peel and core remaining apples; cut into chunks.
  • 7 in blender or food processor, combine 1/4 cup water with about 1/3 of the apple chunks.
  • 8 cover and process at high speed until apples are pureed.
  • 9 add remaining apple chunks, a third at a time; blend until smooth.
  • 10 spoon into a 3 quart saucepan; stir in 1/3 cup apricot preserves and 2 tablespoons sugar.
  • 11 over high heat, heat to boiling.
  • 12 reduce heat to medium-high; cook, uncovered, about 20 minutes or until very thick. there should be about 1 1/2 cups applesauce.
  • 13 preheat oven to 400 degrees.
  • 14 spread applesauce evenly over pastry.
  • 15 arrange reserved apple slices, closely overlapping, to form concentric circles around pie.
  • 16 bake for 45 minutes or until apples slices are tender and lightly browned.
  • 17 remove pie to wire rack.
  • 18 strain remaining apricot preserves through a sieve into a small saucepan.
  • 19 over medium-high heat, heat to boiling.
  • 20 continue cooking about 2 minutes longer or until mixture is thick enough to coat a spoon.
