Chewy Marbled Meringues

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • 2 egg whites
  • 1 pinch salt
  • 1/2 cup caster sugar
  • 2 food coloring, of your choice

Recipe

  • 1 preheat oven to 120c.
  • 2 line 2 baking trays with baking paper.
  • 3 using electric beater whisk egg whites and salt till soft peaks form.
  • 4 gradually add sugar, a spoonful at a time.
  • 5 whisk between each addition until combined.
  • 6 continue to whisk for 2 minutes until thick and glossy and all sugar dissolved.
  • 7 divide mix i half.
  • 8 sprinkle 3 or 4 drops food colouring into one batch.
  • 9 fold through the mix with metal spoon until colouring is just streaked through mix.
  • 10 repeat with second batch and second colour.
  • 11 use 2 teaspoons to spoon mix onto tray to form meringues.
  • 12 place on oven, reduce temp to 90 c, bake for 1 hour.
  • 13 turn off oven and allow meringues to cool in oven.
