Chewy Marbled Meringues

Ingredients
- 2 egg whites
- 1 pinch salt
- 1/2 cup caster sugar
- 2 food coloring, of your choice
Recipe
- 1 preheat oven to 120c.
- 2 line 2 baking trays with baking paper.
- 3 using electric beater whisk egg whites and salt till soft peaks form.
- 4 gradually add sugar, a spoonful at a time.
- 5 whisk between each addition until combined.
- 6 continue to whisk for 2 minutes until thick and glossy and all sugar dissolved.
- 7 divide mix i half.
- 8 sprinkle 3 or 4 drops food colouring into one batch.
- 9 fold through the mix with metal spoon until colouring is just streaked through mix.
- 10 repeat with second batch and second colour.
- 11 use 2 teaspoons to spoon mix onto tray to form meringues.
- 12 place on oven, reduce temp to 90 c, bake for 1 hour.
- 13 turn off oven and allow meringues to cool in oven.
