Cracked Canoe Battered Cod Fritters

Ingredients

  • Servings: 4
  • 1/2 lb cod, filets cut into small strips
  • 1 tablespoon olive oil
  • 3 tablespoons all-purpose flour
  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 cup cracked canoe lager beer
  • 1 teaspoon kosher salt
  • oil (for frying)

Recipe

  • 1 toss the cod strips with the olive oil and a sprinkle of kosher salt. chill and reserve.
  • 2 in a pot, place enough oil to fry the fritters, heat to 325f using a deep frying thermometer.
  • 3 in a medium bowl, add the 1/4 cup flour, cornstarch, cracked canoe lager, 1 teaspoons kosher salt, and mix with your hands until a smooth batter is formed. adjust the consistency with some more beer if needed.
  • 4 toss the cod strips in the 3 tablespoons of flour, then dredge each piece in the batter and fry until golden brown.
  • 5 place on a paper towel, then serve with your favorite tartar sauce and slices of lemon or malt vinegar.
