Apricot Bread Scrumptious!

Ingredients
- 2 1/2 cups dried apricots, chopped
- 2 cups sugar
- 4 cups flour
- 1 cup orange juice
- 1/2 cup water
- 2 eggs
- 4 tablespoons butter
- 4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pecans
Recipe
- 1 plump apricots by soaking in warm water, drain and chop.
- 2 cream sugar, eggs, water and butter. stir in orange juice.
- 3 combine flour, baking powder, soda and salt, add to cream mixture and stir to blend.
- 4 fold in apricots and pecans, mixing well.
- 5 pour batter into two 8 x 4 inch greased and floured loaf pans. bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean. cool 10 minutes and remove from pans. makes 2 loaves. delicious!
