Apricot Bread Scrumptious!

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 2 1/2 cups dried apricots, chopped
  • 2 cups sugar
  • 4 cups flour
  • 1 cup orange juice
  • 1/2 cup water
  • 2 eggs
  • 4 tablespoons butter
  • 4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans

Recipe

  • 1 plump apricots by soaking in warm water, drain and chop.
  • 2 cream sugar, eggs, water and butter. stir in orange juice.
  • 3 combine flour, baking powder, soda and salt, add to cream mixture and stir to blend.
  • 4 fold in apricots and pecans, mixing well.
  • 5 pour batter into two 8 x 4 inch greased and floured loaf pans. bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean. cool 10 minutes and remove from pans. makes 2 loaves. delicious!
