Chili The Light Way

Total Time: 2 hrs 30 mins Preparation Time: 2 hrs Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, chopped
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1/2 teaspoon ground oregano
  • 4 serrano peppers, seeded and diced
  • 14 1/2 ounces chicken broth
  • 28 ounces crushed tomatoes
  • 14 1/2 ounces tomato sauce
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon lime juice
  • 1 lb ground turkey or 1 lb chicken
  • 14 1/2 ounces kidney beans, drained
  • 14 1/2 ounces black beans, drained
  • 1 (15 ounce) can whole corn

Recipe

  • 1 in large pot, heat oil and saute onions and peppers until onions start turning translucent. add garlic for 2 minutes, add chicken broth, tomato sauces, liquid smoke, lime juice, chili powder, cumin and oregano. stir together and heat to slow boil, bring down to a simmer. cook for 1 hour.
  • 2 brown meat and add to chili base. add drained beans and corn. cook for 1 more hour.
  • 3 serve with corn bread. de-lisch.
