Cinnamon Raisin Biscuits

Total Time: 34 mins Preparation Time: 20 mins Cook Time: 14 mins

Ingredients

  • 2 cups flour
  • 1 1/2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chilled stick margarine or 1/4 cup butter, cut into small pieces
  • 1/2 cup raisins
  • 3/4 cup low-fat milk
  • 1 tablespoon flour
  • cooking spray
  • 1/2 cup sifted icing sugar
  • 1 tablespoon low-fat milk

Recipe

  • 1 preheat oven to 400*f.
  • 2 lightly spoon flour into dry measuring cup and level off with a knife.
  • 3 combine flour, sugar, baking powder, salt and cinnamon in a bowl; cut in margarine with a pastry blender or 2 knives until mixture resembles coarse meal.
  • 4 add raisins and toss well; stir in the milk, stirring just until moist.
  • 5 sprinkle 1 tbs flour evenly over work surface.
  • 6 turn dough onto floured surface and knead lightly 4 or 5 times.
  • 7 pat out to a 1/2 inch thickness; cut with a 2 1/2 inch biscuit cutter.
  • 8 place on a baking sheet sprayed lightly with cooking spray, with sides slightly touching.
  • 9 bake for 13 to 14 minutes or until golden.
  • 10 combine icing sugar and milk and drizzle over hot biscuits.
  • 11 serve immediately.
