Cinnamon Scented Couscous

Ingredients

- 1/3 cup slivered almonds
- 2 cups water
- 1 cup diced dates
- 1 teaspoon ground cardamom
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1 tablespoon olive oil
- 1 (10 ounce) package couscous
Recipe
- 1 preheat oven to 350.
- 2 toast almonds until golden, stirring once (about 10 minutes).
- 3 meanwhile, combine water, dates, cardamom, cinnamon, ginger and oil in a medium saucepan.
- 4 cover and bring to a boil. add the couscous, stir and cover before removing from heat.
- 5 let it sit for 5 minutes and stir in the almonds.
