Cinnamon Scented Couscous

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1/3 cup slivered almonds
  • 2 cups water
  • 1 cup diced dates
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 tablespoon olive oil
  • 1 (10 ounce) package couscous

Recipe

  • 1 preheat oven to 350.
  • 2 toast almonds until golden, stirring once (about 10 minutes).
  • 3 meanwhile, combine water, dates, cardamom, cinnamon, ginger and oil in a medium saucepan.
  • 4 cover and bring to a boil. add the couscous, stir and cover before removing from heat.
  • 5 let it sit for 5 minutes and stir in the almonds.
