Crabapple Jelly

Total Time: 2 hrs 5 mins Preparation Time: 2 hrs Cook Time: 5 mins

Ingredients

  • 5 lbs crabapples
  • 5 cups water
  • 1 3/4 ounces dry pectin
  • 9 cups sugar

Recipe

  • 1 wash apples, remove stems and bad spots.
  • 2 combine water and apples in stock pot and cook until soft.
  • 3 strain through a jelly bag to make 7 cups of juice.
  • 4 combine juice and pectin in a large kettle.
  • 5 bring to a full boil over high heat, stirring constantly.
  • 6 stir in sugar completely, and while stirring return to a full boil.
  • 7 keep stirring while you boil for one minute.
  • 8 remove from heat and skim foam from surface.
  • 9 pour into hot sterilized jars.
  • 10 seal and process 10 minutes in boiling water bath.
