Creamy Sauteed Chicken And Spinach

Ingredients

- 6 boneless skinless chicken breast halves
- 1 cup 1% low-fat milk
- 1/2 cup chicken broth
- 1/2 cup chopped onion
- 7 cups chopped fresh spinach
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 1/4 teaspoon ground nutmeg
Recipe
- 1 spray a large skillet with nonstick spray.
- 2 heat the skillet on medium heat.
- 3 cook the chicken 2 minutes per side.
- 4 reduce heat to med-low.
- 5 add milk, chicken broth, and the onion.
- 6 cook 5 minutes, turning the chicken on occasion, until the onions are tender.
- 7 add the spinach and cook 3-4 minutes, stirring occasionally, until the spinach is wilted and the juices of the chicken run clear.
- 8 remove the chicken from the skillet, and keep it warm.
- 9 increase heat to medium.
- 10 cook the spinach mixture until most of the liquid has evaporated, about 3 minutes.
- 11 stir in salt, pepper, and nutmeg.
- 12 serve the chicken on top of the spinach.
