Creamy Sauteed Chicken And Spinach

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 6 boneless skinless chicken breast halves
  • 1 cup 1% low-fat milk
  • 1/2 cup chicken broth
  • 1/2 cup chopped onion
  • 7 cups chopped fresh spinach
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 teaspoon ground nutmeg

Recipe

  • 1 spray a large skillet with nonstick spray.
  • 2 heat the skillet on medium heat.
  • 3 cook the chicken 2 minutes per side.
  • 4 reduce heat to med-low.
  • 5 add milk, chicken broth, and the onion.
  • 6 cook 5 minutes, turning the chicken on occasion, until the onions are tender.
  • 7 add the spinach and cook 3-4 minutes, stirring occasionally, until the spinach is wilted and the juices of the chicken run clear.
  • 8 remove the chicken from the skillet, and keep it warm.
  • 9 increase heat to medium.
  • 10 cook the spinach mixture until most of the liquid has evaporated, about 3 minutes.
  • 11 stir in salt, pepper, and nutmeg.
  • 12 serve the chicken on top of the spinach.
