Corny Egg Drop Soup

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 3
  • 6 cups fat free chicken broth
  • 1/4 lb turkey ham, diced
  • 1 (5 ounce) can water chestnuts, chopped (8 ounce can drained wt)
  • 1 (14 3/4 ounce) can cream-style corn
  • 1/4 teaspoon black pepper
  • 3 tablespoons cornstarch
  • 1/3 cup cold water
  • 2 egg whites, lightly beaten
  • 1 green onion

Recipe

  • 1 bring broth to a boil in 3 qt saucepan.
  • 2 add ham, water chestnuts, corn and pepper. return to boil.
  • 3 meanwhile combine cornstarch with cold water.
  • 4 add cornstarch mixture to soup and cook, stirring until soup boils and thickens.
  • 5 remove from heat and slowly add egg whites while stirring.
  • 6 top with green onions.
