Chicken Chili With Black Beans

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 3 -4 boneless skinless chicken breasts, and cubed
  • 1 medium red pepper, chopped
  • 1 medium yellow pepper, chopped
  • 1 large onion, chopped
  • 3 garlic cloves, crushed
  • 3 tablespoons olive oil
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, undrained
  • 1 (28 ounce) can plum tomatoes with liquid, chopped
  • 1 (12 ounce) can beer

Recipe

  • 1 in a pot, saute chicken, peppers, onion and garlic in oil for 5 minutes or until chicken is no longer pink.
  • 2 stir in seasonings and cook for 3 minutes.
  • 3 stir in beans, tomatoes and beer; bring to a boil.
  • 4 reduce heat and simmer uncovered for 15 minutes. stirring often.
