Dad's Stew Meat

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 3
  • 1 -2 tablespoon olive oil
  • 1 onion, , diced
  • 1 lb beef stew meat (optional)
  • 5 tomatoes, diced (preferably on the vine)
  • salt
  • french bread

Recipe

  • 1 in medium sauce pan, heat oil to low/medium heat, saute onion.
  • 2 dice the tomatoes just small enough the skin is bite size.
  • 3 cut meat into bite size or smaller pieces, removing fat if needed.
  • 4 when onions are translucent, add meat (if desired) and cover with lid.
  • 5 if you added meat, raise temp to medium and cook until the meat is done. add diced tomatoes, cover and bring to a boil.
  • 6 reduce to simmer and cook until tomatoes have dissolved (~20min), stirring occasionally.
  • 7 add salt to taste, cook additional 3min and serve with french bread.
