Chicken And Black Bean Burritos

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • 2 cups cooked brown rice
  • 2 cups shredded cooked chicken
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 cup salsa
  • 2 teaspoons chili powder
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 8 whole wheat tortillas
  • 1 cup shredded cheddar cheese

Recipe

  • 1 in a microwavable bowl combine chicken, beans, salsa and chili powder. cook on high for 2 minutes or until hot, stirring at least once.
  • 2 put the warm cooked rice in a bowl and stir in the lime juice and cilantro.
  • 3 heat your tortillas as directed on the package, put 1/2 cup chicken mixture, 1/4 cup rice mixture and 2 tablespoons cheese down the middle of each tortilla. roll up and serve with more salsa and maybe some sour cream.
