Ingredients
- 3 cups sugar
- 4 1/2 tablespoons cocoa
- 1 dash salt
- 4 tablespoons flour or 3 tablespoons cornstarch
- 3 cups milk
- 6 large eggs, separated
- 1 1/2 teaspoons vanilla
- 6 tablespoons butter
- 6 large egg whites
- 1/2 teaspoon cream of tartar
- 12 tablespoons sugar
- 1 teaspoon vanilla
Recipe
- 1 mix sugar, cocoa, salt & cornstarch together.
- 2 add milk & slightly beaten egg yolks. cook over medium heat stirring constantly until mixture thickens. set aside and add butter & vanilla mix well.
- 3 pour into 2 baked 9" pie shells.
- 4 merinque.
- 5 beat egg whites and cream of tarter til foamy, then add sugar 1 tablespoon at a time til soft peaks form; add vanilla till well blended, spoon on top of pies and bake in 350° oven til evenly browned about 15 minutes.
