Cho. Pie

Ingredients

  • 3 cups sugar
  • 4 1/2 tablespoons cocoa
  • 1 dash salt
  • 4 tablespoons flour or 3 tablespoons cornstarch
  • 3 cups milk
  • 6 large eggs, separated
  • 1 1/2 teaspoons vanilla
  • 6 tablespoons butter
  • 6 large egg whites
  • 1/2 teaspoon cream of tartar
  • 12 tablespoons sugar
  • 1 teaspoon vanilla

Recipe

  • 1 mix sugar, cocoa, salt & cornstarch together.
  • 2 add milk & slightly beaten egg yolks. cook over medium heat stirring constantly until mixture thickens. set aside and add butter & vanilla mix well.
  • 3 pour into 2 baked 9" pie shells.
  • 4 merinque.
  • 5 beat egg whites and cream of tarter til foamy, then add sugar 1 tablespoon at a time til soft peaks form; add vanilla till well blended, spoon on top of pies and bake in 350° oven til evenly browned about 15 minutes.
