Cornmeal And Chili Muffins

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 12
  • 1 cup cornmeal
  • 1 tablespoon sugar
  • 1 1/2 cups flour
  • 1 tablespoon baking powder
  • 2 tablespoons vegetable oil
  • 1 egg, beaten
  • 1 1/4 cups milk
  • 1 (15 ounce) can corn
  • 4 green onions, finely chopped
  • 2 dried red chilies, finely chopped

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 combine dry ingredients in a bowl.
  • 3 measure milk and add oil and egg to the cup.
  • 4 beat, then add to a well in the dry ingredients.
  • 5 stir until just moistened.
  • 6 add remaining ingredients, stirring lightly.
  • 7 grease a one dozen muffin tins.
  • 8 pour 1/2 c batter into each well.
  • 9 bake 20 minutes.
  • 10 let cool 5 minutes before serving.
