Curried Carrot Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 garlic clove, minced
  • 1 onion, chopped
  • 2 teaspoons olive oil
  • 2 stalks celery, chopped (optional)
  • 2 lbs carrots, chopped or 2 lbs sweet potatoes
  • 6 cups vegetable broth
  • 2 teaspoons curry powder
  • 1 teaspoon lemon juice or 1 cup apple cider
  • salt and pepper
  • 1 tablespoon yogurt or 2 teaspoons cilantro leaves

Recipe

  • 1 saute onion and garlic and celery in 2 teaspoons olive oil in large soup pot.
  • 2 add carrots or potatoes, vegetable broth, and curry powder and bring to boil.
  • 3 simmer until carrots are tender, about 20 minutes. remove from heat, cool slightly, and puree.
  • 4 add lemon juice or cider and salt and pepper to taste and stir well.
  • 5 serve with yogurt or cilanto leaves as garnish.
