Butternut Squash With Baby Spinach

Total Time: 1 hr 10 mins Preparation Time: 15 mins Cook Time: 55 mins

Ingredients

  • Servings: 8
  • 2 1/2 lbs butternut squash, cut into 1-inch cubes
  • 4 cups red onions, peeled and chopped
  • 3 tablespoons vegetable oil
  • salt and pepper, to taste
  • 6 ounces baby spinach
  • 3/4 cup craisins

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 combine squash and onions in large shallow pan.
  • 3 drizzle with oil. season with salt and pepper. toss lightly.
  • 4 roast for 55 minutes until tender and brown.
  • 5 add spinach and craisins, toss.
