Cheese Stuffed Chicken Breasts

Ingredients

- 1 lb boneless skinless chicken breast half (4)
- 3/4 ounce part-skim mozzarella cheese (3x1x1/8 inch slices)
- 1 egg
- 2 tablespoons all-purpose flour
- 1 tablespoon grated parmesan cheese
- 1 teaspoon snipped parsley
- 1/4 teaspoon paprika
- 1 teaspoon pepper, to taste
Recipe
- 1 rinse chicken, pat dry.
- 2 use a sharp knife to cut a small pocket in the thickest side of each chicken breast half.
- 3 insert a mozzarella cheese slice in each pocket.
- 4 in a small mixing bowl beat egg slightly.
- 5 in another bowl stir together flour, parmesan cheese, parsley, paprika, and pepper.

- 8 spray a 10x6x2 inch-baking dish with nonstick coating.
- 9 arrange chicken in dish.
- 10 bake in a 375 degree oven for 20-25 minutes or till chicken is tender and no longer pink.
