Chicken Spinach Parcels

Total Time: 1 hr Preparation Time: 25 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 500 g skinless chicken breasts
  • 1 tablespoon plain flour
  • 150 g spinach, chopped (frozen is ok)
  • 1 tablespoon cracked black pepper
  • 1 cup shallot
  • 1 teaspoon olive oil
  • 1 teaspoon chicken stock powder
  • 200 ml skim evaporated milk
  • 9 sheets phyllo pastry (puff pastry sheets can be substituted)
  • 1/4 cup sesame or 1/4 cup poppy seed

Recipe

  • 1 slice the chicken into strips.
  • 2 saute lightly for around 3 minutes, with shallots and cracked pepper.
  • 3 add the flour and mix well.
  • 4 add the spinach, milk and chicken stock powder.
  • 5 heat it till the sauce thickens, remove from the heat and allow it to get quite cool. (you can do this step early, let it sit in the fridge and assemble the parcels later on).
  • 6 layer 3 sheets of filo, slice in half, and spoon about 2 heaped tblsp of mixture onto each filo stack, then wrap up into parcels.
  • 7 spray lightly with oil, sprinkle with sesame/poppy seeds and bake in a hot oven for around 20 minutes.
