Ingredients
- Servings: 8
- 14 ounces sweetened coconut
- 4 cups water
- 2 teaspoons dried orange zest
- 5 cups sugar
- 6 tablespoons lime juice
- 1/2 cup boiling water
- 1/2 cup craisins (dried cranberries)
- 1/4 cup rum
Recipe
- 1 simmer the coconut, water& zest, covered for 30 minutes.
- 2 add the sugar& 3 t juice.
- 3 cook on low, uncovered, for 1 hour.
- 4 stir during the last 15 minutes.
- 5 gradually add in boiling water, 3 t juice,& rum.
- 6 simmer for 1 minute.
- 7 stir in craisins.
- 8 pack into 1/2 pint jars.
