Colorful Citrus Spanish Salad

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • Servings: 4
  • 2 cups arugula, torn into pieces
  • 1 cup mandarin orange, sections
  • 8 radishes, thinly sliced
  • 10 black olives, pitted and halved
  • 1/4 cup orange juice
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon cayenne
  • salt and pepper

Recipe

  • 1 in a bowl whisk together orange juice, lemon juice, olive oil, honey, cinnamon and cayenne. add salt and pepper to taste.
  • 2 pour in to a shakeable container and let dressing sit at least 20minutes before serving.
  • 3 in large serving bowl, lay out arugula on bottom of plate in single layer.
  • 4 next layer, add oranges.
  • 5 next layer, radishes.
  • 6 top dish with the olives.
  • 7 before serving add some of the dressing to top of bowl and toss salad. serve salad and pass extra dressing to please.
