Congealed Triple Apple Salad

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 5
  • 1 envelope unflavored gelatin
  • 1 cup unsweetened apple juice
  • 1 tablespoon sugar
  • 1 cup unsweetened applesauce
  • 1/4 teaspoon almond extract
  • 1 cup diced apple
  • 1 teaspoon lemon juice
  • vegetable oil cooking spray
  • apple, wedges (optional)
  • fresh mint sprig (optional)

Recipe

  • 1 sprinkle gelatin over apple juice in a small saucepan, let stand 1 minute.
  • 2 add sugar; cook over low heat, stirring constantly, until gelatin and sugar dissolve.
  • 3 remove from heat; stir in applesauce and almond extract.
  • 4 chill until the consistency of an unbeaten egg .
  • 5 combine diced apple and lemon juice, tossing well.
  • 6 fold apple into gelatin mixture.
  • 7 spoon into a 3 cup mold coated with cooking spray.
  • 8 cover and chill until firm.
  • 9 unmold salad onto a serving plate.
  • 10 if desired, garnish with apple wedges and fresh mint sprigs.
