Congealed Triple Apple Salad

Ingredients

- 1 envelope unflavored gelatin
- 1 cup unsweetened apple juice
- 1 tablespoon sugar
- 1 cup unsweetened applesauce
- 1/4 teaspoon almond extract
- 1 cup diced apple
- 1 teaspoon lemon juice
- vegetable oil cooking spray
- apple, wedges (optional)
- fresh mint sprig (optional)
Recipe
- 1 sprinkle gelatin over apple juice in a small saucepan, let stand 1 minute.
- 2 add sugar; cook over low heat, stirring constantly, until gelatin and sugar dissolve.
- 3 remove from heat; stir in applesauce and almond extract.
- 4 chill until the consistency of an unbeaten egg .
- 5 combine diced apple and lemon juice, tossing well.
- 6 fold apple into gelatin mixture.
- 7 spoon into a 3 cup mold coated with cooking spray.
- 8 cover and chill until firm.
- 9 unmold salad onto a serving plate.
- 10 if desired, garnish with apple wedges and fresh mint sprigs.
