Cool Chicken Pita

Total Time: 30 mins Preparation Time: 25 mins Cook Time: 5 mins

Ingredients

  • 2 cups honeydew melon, cubed
  • 1 cup cucumber, finely chopped
  • zucchini, finely chopped
  • 1/4 cup thinly sliced green onion
  • 2 cups cooked chicken, shredded rotisserie chicken
  • 1/3 cup lime juice
  • 2 tablespoons canola oil
  • 2 tablespoons water
  • 2 tablespoons snipped fresh mint
  • 1 tablespoon sugar
  • 1/8 teaspoon black pepper
  • 6 whole-grain pita bread rounds

Recipe

  • 1 in a large bowl, todd together the hineydew, cucumber, zucchini, green onions, and chicken.
