Cranberry-oat Surprise Cookies

Ingredients
- 2 cups oats (old-fashioned)
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 (15 1/2 ounce) can cannellini beans, rinsed and drained ( kidney beans)
- 1/4 cup butter
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 1/2 cup chocolate chips
- 1/2 cup dried cranberries
Recipe
- 1 preheat oven to 350°f.
- 2 in the bowl of a food processor, pulse the oats until they resemble a coarse flour. add the flour, baking soda, cinnamon and salt and process until combined. transfer to a large bowl.
- 3 put the beans, butter, brown sugar, egg and vanilla into the food processor and process until smooth.
- 4 pour the bean mixture into the oat mixture and stir by hand until almost combined. stir in the chocolate chips and cranberries.
- 5 drop tablespoonfuls of dough onto a parchment lined (or non-stick sprayed) cookie sheet and then gently flatten each one with a water-dampened hand.
- 6 bake for 14-16 minutes or til golden on the edges and soft in the middle. transfer to a wire rack to cool.
