Cranberry-oat Surprise Cookies

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 2 cups oats (old-fashioned)
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 (15 1/2 ounce) can cannellini beans, rinsed and drained ( kidney beans)
  • 1/4 cup butter
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/2 cup chocolate chips
  • 1/2 cup dried cranberries

Recipe

  • 1 preheat oven to 350°f.
  • 2 in the bowl of a food processor, pulse the oats until they resemble a coarse flour. add the flour, baking soda, cinnamon and salt and process until combined. transfer to a large bowl.
  • 3 put the beans, butter, brown sugar, egg and vanilla into the food processor and process until smooth.
  • 4 pour the bean mixture into the oat mixture and stir by hand until almost combined. stir in the chocolate chips and cranberries.
  • 5 drop tablespoonfuls of dough onto a parchment lined (or non-stick sprayed) cookie sheet and then gently flatten each one with a water-dampened hand.
  • 6 bake for 14-16 minutes or til golden on the edges and soft in the middle. transfer to a wire rack to cool.
