Curried Carrot, Sweet Potato (or Yam) & Ginger Soup

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 5
  • 2 teaspoons olive oil (or canola oil)
  • 1/2 cup shallot, chopped (or onion)
  • 3 cups sweet potatoes, peeled & 1/2-inch cubed (or yams)
  • 1 1/2 cups carrots, peeled & 1/4-inch sliced
  • 1 tablespoon ginger, grated
  • 2 teaspoons curry powder
  • 3 cups fat free chicken broth

Recipe

  • 1 heat oil in saucepan.
  • 2 add shallots (onions), sauté for 3 minutes until tender.
  • 3 add potato, carrots, ginger & curry. cook 2 minutes.
  • 4 add broth. bring to boil then simmer for 25-30 minutes – until tender.
  • 5 puree soup ½ at a time in blender or food processor.
