Curried Carrot, Sweet Potato (or Yam) & Ginger Soup

Ingredients
- Servings: 5
- 2 teaspoons olive oil (or canola oil)
- 1/2 cup shallot, chopped (or onion)
- 3 cups sweet potatoes, peeled & 1/2-inch cubed (or yams)
- 1 1/2 cups carrots, peeled & 1/4-inch sliced
- 1 tablespoon ginger, grated
- 2 teaspoons curry powder
- 3 cups fat free chicken broth
Recipe
- 1 heat oil in saucepan.
- 2 add shallots (onions), sauté for 3 minutes until tender.
- 3 add potato, carrots, ginger & curry. cook 2 minutes.
- 4 add broth. bring to boil then simmer for 25-30 minutes – until tender.
- 5 puree soup ½ at a time in blender or food processor.
