Curry Cauliflower & Beans Soup

Total Time: 1 hr Preparation Time: 25 mins Cook Time: 35 mins

Ingredients

  • 1 large red onion, chopped
  • 1 tablespoon olive oil
  • 1/2 head cauliflower, in florets
  • 32 ounces chicken stock
  • 1 tablespoon curry powder
  • 1/2 teaspoon salt
  • 1 (15 1/2 ounce) can garbanzo beans
  • french-fried onions (in can)

Recipe

  • 1 a dd onion and oil to stockpot on medium. cook, stirring occasionally 10-12 min until onion begins to brown.
  • 2 add cauliflower and stock to pot, cover. increase heat to medium-high. bring to a boil. reduce heat to simmer. cook 20-25 min until veggies are soft.
  • 3 add curry powder, salt, and beans. remove pot from heat. puree soup carefully with hand blender until smooth. heat on low 4-5 minute portion into bowls and top with fried onion pieces.
