Danish Ebleskivers

Total Time: 40 mins Preparation Time: 25 mins Cook Time: 15 mins

Ingredients

  • 6 eggs, separated
  • 2 cups buttermilk
  • 2 cups flour
  • 4 tablespoons sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • oil (for frying)
  • powdered sugar, for dusting

Recipe

  • 1 beat egg whites until stiff peaks form.
  • 2 beat egg yolks until thick and lemon color.
  • 3 mix buttermilk, flour, sugar, baking soda and salt into egg yolks, mix well.
  • 4 gently fold in egg whites.
  • 5 place a small amount of oil into each cup of baking pan.
  • 6 heat over medium heat.
  • 7 fill each cup with about 2/3 cup of mixture.
  • 8 cook until bubbly and set around edges.
  • 9 turn with a tooth pick.
  • 10 cook on the other side until golden. remove from pan set on paper lined tray and dust with powder sugar.
