Chickpea Veggie Salad

Ingredients

- 1 (16 ounce) can chickpeas
- 1 english cucumber, chopped (seeded if necessary)
- 1 1/2 cups halved grape tomatoes
- 3 tablespoons thinly sliced red onions
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon chopped mint (optional)
- 1 tablespoon lemon juice
- 1/2 tablespoon apple cider vinegar
- 3 tablespoons olive oil
- salt and pepper
Recipe
- 1 mix together vegetables (chickpeas, cucumber, tomatoes, onion).
- 2 toss with cilantro and mint (if using).
- 3 sprinkle with freshly ground pepper.
- 4 whisk together lemon juice, cider vinegar, and ½ tsp salt. add olive oil and whisk until emulsified.
- 5 toss with salad. taste for seasoning and adjust (you may want to add more lemon juice or vinegar depending on how acidic you like it).
