Chickpea Veggie Salad

Ingredients

  • Servings: 2
  • 1 (16 ounce) can chickpeas
  • 1 english cucumber, chopped (seeded if necessary)
  • 1 1/2 cups halved grape tomatoes
  • 3 tablespoons thinly sliced red onions
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon chopped mint (optional)
  • 1 tablespoon lemon juice
  • 1/2 tablespoon apple cider vinegar
  • 3 tablespoons olive oil
  • salt and pepper

Recipe

  • 1 mix together vegetables (chickpeas, cucumber, tomatoes, onion).
  • 2 toss with cilantro and mint (if using).
  • 3 sprinkle with freshly ground pepper.
  • 4 whisk together lemon juice, cider vinegar, and ½ tsp salt. add olive oil and whisk until emulsified.
  • 5 toss with salad. taste for seasoning and adjust (you may want to add more lemon juice or vinegar depending on how acidic you like it).
