Danish-apricot Filling

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 cup dried apricot, packed
  • 1 cup water
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon almond extract

Recipe

  • 1 put apricots, water and sugar into a saucepan.
  • 2 heat and simmer until apricots are soft, plumped and have absorbed most of the liquid.
  • 3 (can be done in a microwave).
  • 4 puree in food processor, transfer to a bowl and stir in lemon juice and almond extract.
  • 5 scrape filling into a small container and cool to room temperature.
  • 6 seal container and chill.
  • 7 will keep refrigerated for two weeks.
