Broiled Baby Zucchini Boats

Total Time: 22 mins Preparation Time: 10 mins Cook Time: 12 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 2 teaspoons garlic, minced
  • 4 small zucchini (about 6 inches long each) or 4 small summer squash, halved lengthwise (about 6 inches long each)
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 cup parmesan cheese, freshly shredded or grated

Recipe

  • 1 heat broiler.
  • 2 heat olive oil in a large ovenproof skillet over medium-low heat.
  • 3 add garlic and cook 10 seconds or until golden, but not brown.
  • 4 place zucchini cut side down in skillet; sprinkle with salt and pepper.
  • 5 increase heat to medium and cook 8 minutes, or until the cut surface is caramelized and the zucchini is barely tender.
  • 6 turn zucchini over and top with cheese; cook one minute.
  • 7 transfer skillet to broiler and cook for 3 minutes or until the cheese is melted and golden brown.
