Broiled Baby Zucchini Boats

Ingredients
- Servings: 4
- 1 tablespoon olive oil
- 2 teaspoons garlic, minced
- 4 small zucchini (about 6 inches long each) or 4 small summer squash, halved lengthwise (about 6 inches long each)
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 1/4 cup parmesan cheese, freshly shredded or grated
Recipe
- 1 heat broiler.
- 2 heat olive oil in a large ovenproof skillet over medium-low heat.
- 3 add garlic and cook 10 seconds or until golden, but not brown.
- 4 place zucchini cut side down in skillet; sprinkle with salt and pepper.
- 5 increase heat to medium and cook 8 minutes, or until the cut surface is caramelized and the zucchini is barely tender.
- 6 turn zucchini over and top with cheese; cook one minute.
- 7 transfer skillet to broiler and cook for 3 minutes or until the cheese is melted and golden brown.
