Chocolate Sorbet

Ingredients
- 2 1/3 cups water
- 3/4 cup sugar
- 3/4 cup cocoa powder
- 4 ounces bittersweet chocolate, chopped
- 1/2 teaspoon vanilla extract
Recipe
- 1 bring water and sugar to a boil in a saucepan, stirring often to dissolve the sugar.
- 2 whisk in cocoa powder until smooth.
- 3 bring to a boil; simmer for 1 minute.
- 4 pour cocoa mixture over the chopped chocolate and whisk until smooth.
- 5 add vanilla, cover and chill until cold.
- 6 freeze this mixture in an ice cream maker according to your manufacturer's instructions.
- 7 when frozen, transfer to a freezer container, press a piece of wax paper to the top and freeze until firm, for at least 3 hours.
