Cauliflower Salad

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 head cauliflower, sliced
  • salt and pepper
  • 1 large red apple, unpeeled and diced
  • 1 cup celery, sliced
  • 3 small scallions, sliced
  • 1/3 cup blue cheese dressing

Recipe

  • 1 wash the cauliflower and place in a two quart saucepan.
  • 2 season and cover.
  • 3 heat the pan over medium flame for 5 minutes.
  • 4 reduce heat to low and cook for 15 minutes.
  • 5 cool.
  • 6 add the apple, celery and scallions to the cauliflower.
  • 7 add the salad dressing and chill before serving.
