Cauliflower Salad

Ingredients
- Servings: 6
- 1 head cauliflower, sliced
- salt and pepper
- 1 large red apple, unpeeled and diced
- 1 cup celery, sliced
- 3 small scallions, sliced
- 1/3 cup blue cheese dressing
Recipe
- 1 wash the cauliflower and place in a two quart saucepan.
- 2 season and cover.
- 3 heat the pan over medium flame for 5 minutes.
- 4 reduce heat to low and cook for 15 minutes.
- 5 cool.
- 6 add the apple, celery and scallions to the cauliflower.
- 7 add the salad dressing and chill before serving.
