Chocolate Mango Cake

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • 1 cup sugar
  • 2 1/2 cups self raising flour
  • 60 g butter
  • 4 tablespoons cocoa
  • 1 1/4 cups mango puree
  • 1 teaspoon baking soda
  • 2 eggs
  • 1/2 cup buttermilk

Recipe

  • 1 grease and line 2 sandwich tins.
  • 2 sift sugar and flour into a bowl.
  • 3 place butter,cocoa and puree into a saucepan.
  • 4 stir over low heat until just boiling.cool.
  • 5 whisk soda and eggs into buttermilk.
  • 6 add to dry ingredients with puree mixture.
  • 7 mix well and pour into tins.
  • 8 bake at 180c for 30mins or cooked.
  • 9 stand 5mins. in tins, turn out onto cake coolers to cool.
  • 10 when cold fill with whipped cream and mango slices.
  • 11 dust top with icing sugar.
