Citrus-ginger Chicken

Ingredients

  • Servings: 2
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lime juice
  • 1 tablespoon orange juice
  • 1 tablespoon gingerroot, freshly chopped
  • 1 tablespoon whole grain mustard
  • 1 tablespoon honey
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon ground coriander
  • 1/4 cup green onion, sliced
  • 2 (4 ounce) boneless skinless chicken breasts

Recipe

  • 1 combine ingredients for marinade. remove all visible fat from chicken. place in shallow bowl and pour marinade over. cover and marinate for at least 2 hours. (can also marinate in a ziplock bag).
  • 2 remove chicken from marinade and reserve marinade. saute chicken breasts in a nonstick skillet coated with nonstick cooking spray (olive oil one is great). turn and saute until done. remove from skillet and keep warm.
  • 3 add reserved marinade to skillet and bring to a boil for 5 minutes. spoon sauce over chicken and serve.
