Chocolate Meringue Cookies

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 24
  • 3 egg whites
  • 1/8 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 2/3 cup sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1/3 cup semi-sweet chocolate chips (i used the mini chocolate chips)

Recipe

  • 1 preheat oven to 300 degrees.
  • 2 combine egg whites, cream of tartar and vanilla.
  • 3 beat until the whites form soft peaks.
  • 4 slowly add sugar; beat until stiff peaks form and mixture becomes glossy.
  • 5 fold in cocoa and chocolate chips by hand.
  • 6 drop mixture by teaspoonfuls onto a greased cookie sheet (i used parchment paper).
  • 7 bake for 25-30 minutes.
  • 8 cool on wire rack.
  • 9 store in airtight container.
