Chocolate Meringue Cookies

Ingredients

- 3 egg whites
- 1/8 teaspoon cream of tartar
- 1/2 teaspoon vanilla extract
- 2/3 cup sugar
- 1 tablespoon unsweetened cocoa powder
- 1/3 cup semi-sweet chocolate chips (i used the mini chocolate chips)
Recipe
- 1 preheat oven to 300 degrees.
- 2 combine egg whites, cream of tartar and vanilla.
- 3 beat until the whites form soft peaks.
- 4 slowly add sugar; beat until stiff peaks form and mixture becomes glossy.
- 5 fold in cocoa and chocolate chips by hand.
- 6 drop mixture by teaspoonfuls onto a greased cookie sheet (i used parchment paper).
- 7 bake for 25-30 minutes.
- 8 cool on wire rack.
- 9 store in airtight container.
