Cranberry Orange Bread

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 2 tablespoons butter, softened
  • 1 egg
  • 1 cup orange juice
  • 1 cup chopped cranberries
  • 1/2 cup chopped nuts
  • 2 tablespoons grated orange rind

Recipe

  • 1 in a medium bowl combine, flour, baking powder, baking soda, and salt; set aside.
  • 2 beat sugar and butter in a large bowl until light and fluffy.
  • 3 beat in egg until well blended.
  • 4 add dry ingredients and orange juice to sugar mixture and mix well.
  • 5 stir in cranberries, chopped nuts, and orange rind.
  • 6 pour into well-greased 8-1/2 x 4-1/2 inch loaf pan.
  • 7 bake at 350 for 50-55 minutes or until fork inserted into center comes out clean.
  • 8 cool for 15 minutes.
  • 9 serve and enjoy.
  • 10 can be stored at room temperature or refrigerated.
