Bourbon Carrots

Ingredients

- 3 cups water
- 1 1/2 lbs baby carrots
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 2 tablespoons butter
- 3 tablespoons brown sugar
- 2 tablespoons bourbon
- chopped fresh parsley, for garnish if desired (optional)
Recipe
- 1 in a large saucepan, bring water to a boil; then add carrots, sugar and salt.
- 2 return to a boil and cook for 5 minutes or until tender.
- 3 melt butter and brown sugar in a large skillet over medium-high heat.
- 4 stir in carrots and cook, stirring occasionally, 2 to 3 minutes.
- 5 add bourbon and cook, stirring occasionally for 3 more minutes.
- 6 garnish if desired.
