Chicken Vermicelli Salad

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 500 g vermicelli
  • 1 lb cooked boneless skinless chicken breast
  • 1 large onion
  • 1 large red pepper
  • 1 large yellow pepper
  • 1 large green pepper
  • 1 (14 3/4 ounce) can sweet corn
  • 2 cups chicken stock
  • salt and pepper
  • 4 tablespoons oil
  • 2 tablespoons butter or 2 tablespoons ghee

Recipe

  • 1 first off chop the chicken , onion and peppers into long thin strips
  • 2 heat a large pan and add oil and fry the onion until it;s golden brown.
  • 3 add the peppers and cook for about 15 minutes then add the chicken and sweet corn and cook for another 10 minutes.
  • 4 in another pan add the butter or ghee and fry the vermicelli till it's dark brown
  • 5 note: you have to stir it constantly and be careful because it could burn easily ,.
  • 6 cover the vermicelli with chicken stock and turn the heat down and let it cook for about 15 minutes or until it;s soft.
  • 7 combine everything together in a large bowl .
  • 8 you can serve it hot or cold .
