Chicken Vermicelli Salad

Ingredients
- Servings: 4
- 500 g vermicelli
- 1 lb cooked boneless skinless chicken breast
- 1 large onion
- 1 large red pepper
- 1 large yellow pepper
- 1 large green pepper
- 1 (14 3/4 ounce) can sweet corn
- 2 cups chicken stock
- salt and pepper
- 4 tablespoons oil
- 2 tablespoons butter or 2 tablespoons ghee
Recipe
- 1 first off chop the chicken , onion and peppers into long thin strips
- 2 heat a large pan and add oil and fry the onion until it;s golden brown.
- 3 add the peppers and cook for about 15 minutes then add the chicken and sweet corn and cook for another 10 minutes.
- 4 in another pan add the butter or ghee and fry the vermicelli till it's dark brown
- 5 note: you have to stir it constantly and be careful because it could burn easily ,.
- 6 cover the vermicelli with chicken stock and turn the heat down and let it cook for about 15 minutes or until it;s soft.
- 7 combine everything together in a large bowl .
- 8 you can serve it hot or cold .
