Chocolate Zucchini Cake

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

• 1 1/2 cups zucchini, shredded (1 small)
• 1 1/2 cups soymilk (or whatever quantity water is called for in cake instructions)
• 1 teaspoon vanilla
• 1 teaspoon cinnamon
• 1 (10 1/2 ounce) box chocolate cake mix (or devils food)

Recipe

• 1 mix all ingredients together in a large mixing bowl, making sure all cake mix is blended.
• 2 pour into 9 x 13 pan and bake as per box instructions.
• 3 after cake is cooled, top with cream cheese frosting (either homemade or prepared).
