Buffalo Chicken Sloppy Joes - Healthier

Ingredients
- Servings: 4
- 1 teaspoon canola oil
- 1/2 medium onion, chopped fine (about 1/2 c)
- 1/2 cup grated carrot, about 1 large carrot
- 1 lb lean ground chicken breast
- 1/2 teaspoon montreal chicken seasoning, my addition
- 1/8 teaspoon garlic granules, my addition
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 8 ounces tomato sauce
- 1/4-1/2 cup hot sauce, i used 1/2 c frank's red hot (to taste)
- 1/2 cup blue cheese dressing, your favorite blue cheese dressing with crumbled blue cheese i suggest the ultimate creamy blue cheese dressing & dip
- 4 lettuce leaves, for garnish
- 4 soft rolls
Recipe
- 1 heat oil in a saute pan over medium heat.
- 2 add onions and carrots. cook until onions become translucent and carrots are softening, about 5-6 minutes.
- 3 add the ground chicken, and cook until done, sprinkle in the salt & pepper & dry seasonings, breaking up the meat as it cooks.
- 4 stir in the tomato sauce and hot sauce; simmer for 20-30 minutes.
- 5 add a lettuce leaf to your roll, then spoon on the chicken mixture. top with blue cheese dressing or crumbles for serving.
- 6 serve with oven fries or onion rings. yum!
