Cantaloupe Granita

Total Time: 6 hrs 30 mins Preparation Time: 30 mins Cook Time: 6 hrs

Ingredients

  • Servings: 6
  • 1 cantaloupe
  • 2 tablespoons honey
  • 1/2 cup water
  • 2 tablespoons dark rum
  • fresh mint sprig

Recipe

  • 1 cut cantaloupe in half, remove seeds, peel and dice coarsely.
  • 2 place in a food processor or blender in batches with honey, water and rum.
  • 3 blend until smooth.
  • 4 pour into a 9 x 9 inch baking pan and freeze until almost firm.
  • 5 break up into small chunks and return to food processor or blender.
  • 6 freeze until almost firm and blend again.
  • 7 freeze again.
  • 8 to serve use an ice cream scoop and place 1 to 2 scoops of granite in individual serving dishes.
  • 9 garnish each serving with a sprig of fresh mint.
