Cantaloupe Granita

Ingredients
- Servings: 6
- 1 cantaloupe
- 2 tablespoons honey
- 1/2 cup water
- 2 tablespoons dark rum
- fresh mint sprig
Recipe
- 1 cut cantaloupe in half, remove seeds, peel and dice coarsely.
- 2 place in a food processor or blender in batches with honey, water and rum.
- 3 blend until smooth.
- 4 pour into a 9 x 9 inch baking pan and freeze until almost firm.
- 5 break up into small chunks and return to food processor or blender.
- 6 freeze until almost firm and blend again.
- 7 freeze again.
- 8 to serve use an ice cream scoop and place 1 to 2 scoops of granite in individual serving dishes.
- 9 garnish each serving with a sprig of fresh mint.
