Creamy Corn Salad

Ingredients
- 12 ounces canned kernel corn, drained (341 ml)
- 14 ounces canned black beans, rinsed and drained (398 ml)
- 1/2 cup finely chopped red onion
- 1/2 cup finely chopped red pepper
- 2 medium tomatoes, seeded and finely chopped
- 2 tablespoons chopped fresh cilantro (or fresh parsley) (optional)
- 1/4 teaspoon salt
- 1/4 cup ranch dressing
- 1 tablespoon lime juice
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1 garlic clove, minced (or 1/4 tsp. dry garlic powder)
Recipe
- 1 combine first 7 ingredients in a large bowl.
- 2 for dressing:.
- 3 combine all 5 dressing ingredients in a small bowl. stir until well combined. makes approximately 2/3 cup dressing.
- 4 drizzle over salad and toss to coat.
