Delicious Lemon Roast Potatoes

Ingredients

• 8 potatoes, scrubbed
• 1/2 cup lemon juice
• 1/3 cup extra virgin olive oil
• 3 garlic cloves, minced
• 2 teaspoons salt
• 2 teaspoons oregano, dried
• 1 teaspoon pepper

Recipe

• 1 boil potatoes for approximately 15 minutes in a large pot of salted water.
• 2 drain and let cool somewhat.
• 3 peel potatoes if desired and cut into wedges.
• 4 whisk together all other ingredients in a large bowl. toss with potatoes to coat.
• 5 arrange potatoes in a greased baking pan or dish.
• 6 roast at 400 degrees, turning once, for about 40 minutes.
