Deluxe Rice Amandine

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 8
  • 1/2 cup almonds, slivered and blanched
  • 2 tablespoons butter
  • 2 2/3 cups water
  • 1/2 cup dried cranberries
  • 1 teaspoon salt
  • 2 2/3 cups quick-cooking rice

Recipe

  • 1 in a large saucepan saute almonds in the butter until golden brown.
  • 2 add the water, cranberries and salt.
  • 3 bring to a boil.
  • 4 stir in the rice, remove from the heat and let stand, covered for 5 minutes.
  • 5 fluff with a fork and serve.
