Captain's Club With Shrimp And Chipotle Mayonnaise (+ Healthy Va

Ingredients

  • Servings: 4
  • 12 slices bread, toasted
  • 8 ounces bacon, cooked
  • 1 lb bay shrimp, cooked
  • 2 stalks celery, diced
  • 1/2 cup mayonnaise
  • 1/2 teaspoon chipotle chili pepper
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro, chopped
  • 2 tomatoes, sliced
  • 1 avocado, peeled and sliced
  • sea salt
  • fresh cracked black pepper

Recipe

  • 1 combine shrimp, celery, mayo, lime juice and cilantro. season with salt and pepper.
  • 2 top one slice of toast with 1/4 c shrimp mixture and 3 tomato slices. place slice of toast on top.
  • 3 for captain club: add 1/4 c shrimp mixture, 2 avocado slices, 2 slices bacon and another slice of toast.
  • 4 repeat for each.
