Chilled Mushroom Salad

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • Servings: 4
  • 8 ounces fresh mushrooms, cleaned and sliced
  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1/4 teaspoon tarragon
  • 1/4 teaspoon granulated sugar
  • 1/4 teaspoon kosher salt
  • parsley (to garnish) (optional)

Recipe

  • 1 mix ingredients for the vinaigrette in a small bowl
  • 2 in a large bowl, toss mushroom slices with vinaigrette.
  • 3 if you want you can garnish with a little parsley.
  • 4 chill before serving.
