- 8 ounces fresh mushrooms, cleaned and sliced
- 2 tablespoons olive oil
- 3 tablespoons lemon juice
- 1/4 teaspoon tarragon
- 1/4 teaspoon granulated sugar
- 1/4 teaspoon kosher salt
- parsley (to garnish) (optional)
Recipe
- 1 mix ingredients for the vinaigrette in a small bowl
- 2 in a large bowl, toss mushroom slices with vinaigrette.
- 3 if you want you can garnish with a little parsley.
- 4 chill before serving.
