Curried Rice With Cauliflower And Peas

Ingredients

- 1/4 cup butter
- 1 tablespoon minced ginger
- 1 1/4 teaspoons curry powder
- 1/2 teaspoon lemon zest, minced
- 2 cups small cauliflower florets
- 1/2 cup red peppers or 1/2 cup green pepper, diced
- 1/2 cup green onion, sliced
- 1 1/2 cups rice
- 1/2 teaspoon salt
- 2 cups water
- 1 cup frozen peas, thawed
- black pepper, to taste
Recipe
- 1 melt butter in large saucepan over medium heat.
- 2 add ginger, curry powder and lemon zest and stir for 30 seconds.
- 3 add cauliflower, peppers, onions, rice and salt; stir.
- 4 add water and bring to a boil; reduce heat and cover.
- 5 cook 15-18 minutes, until water is absorbed and rice is cooked through.
- 6 stir in peas and black pepper, cover and let sit for 5 minutes.
